Baked Soy Lemon Chops
Absolutely outstanding. I ended up making the pork in foil packets and threw in some cauliflower florets I had on hand. The flavor was so good that I regularly make cauliflower and potatoes this way now. I marinate overnight and then cook in the marinade. I'll definitely make this again - with pork and/or veggies!

This was the first salad dressing that I've ever made myself. I didn't have very high expectations because I didn't see how, with such a short ingredient list, it could be very flavorful, but it was GREAT. I took it with a big green salad to a BBQ and it absolutely disappeared and I had lots of people asking for the recipe. This is now a staple in my house. Also, the first time I made it I didn't have any red wine vinegar so I used Chinese red vinegar - it's fabulous both ways. Thanks so much for sharing!

Bean Casserole
This recipe is wonderful! Instead of bread I topped it with polenta - I just bought the sort of pre-made polenta in a tube, then sliced it and layered it on top of the bean and vegetable mixture. The polenta browned up nicely in the oven, and it was great. My boyfriend is a vegetarian, so I'm always on the lookout for recipes that we'll both enjoy. This one was hearty and savory, and we loved it. I think the spices could also be easily altered to make it a "southwestern" bean casserole - next time I'll try chili powder and cumin and top it with cornbread mix. Wonderful!
