Vinaigrette
This was the first salad dressing that I've ever made myself. I didn't have very high expectations because I didn't see how, with such a short ingredient list, it could be very flavorful, but it was GREAT. I took it with a big green salad to a BBQ and it absolutely disappeared and I had lots of people asking for the recipe. This is now a staple in my house. Also, the first time I made it I didn't have any red wine vinegar so I used Chinese red vinegar - it's fabulous both ways. Thanks so much for sharing!

Bean Casserole
This recipe is wonderful! Instead of bread I topped it with polenta - I just bought the sort of pre-made polenta in a tube, then sliced it and layered it on top of the bean and vegetable mixture. The polenta browned up nicely in the oven, and it was great. My boyfriend is a vegetarian, so I'm always on the lookout for recipes that we'll both enjoy. This one was hearty and savory, and we loved it. I think the spices could also be easily altered to make it a "southwestern" bean casserole - next time I'll try chili powder and cumin and top it with cornbread mix. Wonderful!

Ronnetta's Spaghetti Sauce
This was really good. My boyfriend's a vegetarian, so instead of the ground beef (and instead of the fake "beef", which I find can get sort of dry and has little flavor) I added finely diced zucchini and eggplant. We both loved it. I added more garlic and some crushed red pepper, as well as some tabasco (which I add to everything!). If your family isn't into spicy, then it's good as is. By the way - if you're a vegetarian, make sure you read the spaghetti spice packet well - a lot of them contain animal ingredients.
