Mashed Potato Casserole

The first time I made this exactly as written, the next time I used a packet of ranch dressing and tonight I made it using bacon bits and subbed the cream cheese for shredded cheddar to make 'loaded baked potato'. They are ALL really good. This recipe is very versatile and super easy to make. It doesn't taste like boxed potatoes.

Cream Cheese Frosting II

Best frosting EVER. I had no problems with consistency, but I followed the directions exactly. It's not too sweet and doesn't lose the cream cheese flavor, which is what I prefer.

Pumpkin Bread IV

I make this every fall, exactly as written. It's super moist and flavorful. You'd think that three loaves are a lot, but with a family of all boys, they go within a few days. Really yummy with a cup of coffee.
