Slow Cooker Carnitas

This was a great recipe to cook up and portion out in freezer bags to have on hand for other recipes. I made just a few minor changes. First, I used the boneless pork rib meat because its what I had, and it is amazingly cheap as well. Second, I cut way back on the cinnamon as I thought it would be overpowering otherwise. Just a pinch was all it needed. Otherwise, wonderful recipe and am planning on a repeat performance tomorrow.

Ground Beef and Sausage in Red Beans and Rice

I made this the other night as we needed a good budget dinner for the fam. We all enjoyed it, but I did add some seasoning. I used a cajun seasoning mix, and added about 1/2TB. or maybe a little more. This might not be to everyone's taste, but I would definatly recommend some sort of added seasoning. Also, please cut WAY down on the rice, as that amount of raw will give you 3/4 GALLON of cooked rice!!

Chocolate Mint Candies Cookies

ABSOLUTLY AWSOME!!!!!!!!!! Followed recipe and the dough made 44 good size cookies, 2 of which didn't last long enough to cool all the way! :-) 5 stars for taste and ease of prep. I used a TB cookie scoop, which I would highly recommend to anyone who is even a casuel cookie baker. They make the task of dough portioning WAY easy!! Can you tell I liked these?????!! Oh, one more thing that I personally found put these yummies OVER THE TOP, was to double the amount to salt called for. Chocolate and salt play VERY nicely together....give it a try!!!

Oven-Barbecued Spareribs

The only reason I am giving a 4 star rating is because the meat turned out rather tough and dry. That being said, the sauce was SUPER, and I believe the fault may have been mine for getting the wrong cut of meat. The only addition I made to the sauce recipe as it did seem a bit acidic, was to pour in about 1/4 c of regular bbq sauce (can't remember the brand) and that made it deeeeeeelish. If yours turns out a bit overdone, just slice the meat as thin as you can and mix all with the sauce and let sit overnight in the fridge. Nuke the next day and wa-lah!!! MUCH better!!!
