Chef John's Chicken and Mushrooms

I followed this simple recipe for the most part except that I substituted a 1/2 cup of white wine instead of the water in Step 6. It added that little sumthin' to the shrooms that put it over the top for me.

Spoiled Baby Back Ribs

These ribs turned out great. As a twist I broiled half in the oven and did half on the grill. I asked my family to pick which one they liked best. They all picked the grill, as did I. Coming from the south, it's hard to imagine ribs anywhere other than the grill.

Baked Garlic Parmesan Chicken

When I make this again I'll add more seasonings to the bread crumb/parmesan mixture. To me it was just too bland. I had some pretty thick breasts so I baked them for 35 mins versus 30 and the meat came out great. More salt, and I'll dwell on what else I'll add, but with a few tweaks this could become a standard at my place because it's so easy!

Bermuda Spinach Salad

Oh man! This salad/dressing combo is killer! I've always kinda been a raspberry vinagrette guy, but no more. This celery seed recipe tops my list! Nice, simple blend of ingredients...easy to prepare.

Spicy Green Beans

My wife and I really liked these. Very simple to prepare and cook. The jalapeno I chose happened to not be too hot, but the flavor came through along with the shallots. Will most definately make again!

Chipotle Crusted Pork Tenderloin

Very good recipe! Had just the right amount of heat for my family, but others who don't like things particularly hot might want to tone it down a bit. Will do this on my tenderloins again!

Pepper-Honey Cedar Plank Salmon

Balsamic-Glazed Salmon Fillets

I have really gotten into plank grilling over the last year and planked this recipe after soaking the boards in a mix of water and apple juice all day. The "apple smoke" added a fruity taste that even my daughter remarked about. I've planked grilled with a citrus-based recipe and sometimes it's overbearing. But this combination worked great. Will definately do this one again!

Pecan Pie IV

Made it for Thanksgiving and served with Blue Bell Homemade Vanilla. Everybody loved it! Will probably try cane syrup next time vs corn syrup. It's a southern thang!

Sweet Potato Souffle I

I used pecans instead of walnuts, but hey, I'm from the south and the natural choice is pecans. Have done this recipe a couple of times now and contrary to some of the other reviews I haven't found it to be too sweet, in fact, it hasn't turned out to be nearly as sweet as I had thought it would be. Great recipe!
