Creamy Rice Pudding
This was awesome AND simple! 5 stars all the way. I followed some previous suggestions and just added the milk to the same pot. Also, for a more authentic Mediterranean flavor, I added a few whole cloves along with the milk and a few drops of pure almond extract. It was FAB!

Texas Black Bean Soup
A great dish on a budget. Adding this to the family cookbook. Make sure to rinse beans (either soaked or canned) to get rid of extra salt/starch. If you add the bean water, you'll get a thick, unappealing "sauce".

Roast Sticky Chicken-Rotisserie Style
I didn't find the taste to be very good and it came out dry. I'll stick to my aunt's "old-school" recipe. Simple, easy, and great.
