Chipotle Shrimp Tacos

This was great! I did cut the recipe in half, used 1 1/2 chipotles, and yes - it was pretty spicy (but just right). I used sliced avocado and a tiny bit of mexican cheese to top the soft tacos. Very good - will absolutely be making this again!

Blackened Tuna Steaks with Mango Salsa

This was wonderful! I made it even easier by using a jar of mango peach salsa I found at the store. It was a quick and easy dinner - yet so very delicious. Thanks for sharing the recipe!

Downeast Maine Pumpkin Bread

This is my second time making this recipe. Today I am baking 12 loaves to add to gift baskets! (Yes, I do love it...) Here are my modifications: instead of all oil, I used 1/2 c applesauce & 1/2 c oil; instead of 3 cups sugar, I used 1 cup white sugar & 1 cup brown sugar (it is plenty sweet with the 2 cups total); I doubled the cinnamon, nutmeg & cloves and added 2 teaspoons of pumpkin pie spice as well. I also added 1 cup chopped walnuts and 1 cup mini chocolate chips. I baked it for one hr at 350. When done, I did poke holes in the top and drizzled with a melted butter, sugar/cinnamon mixture. Delicious!

Make-Ahead Turkey Gravy

I am not a gravy maker, especially attempting it at the last minute. So, in the past I purchased gravy in a jar. No more thanks to this recipe. It was VERY good, had a nice flavor, and I will absolutely make this again. Thank you for posting for us non-gravy makers!

Strawberry-Banana Gelatin Salad

This is very much like a traditional salad my mother used to make every holiday - now I do. I use Cool Whip for the filling instead of the sour cream mixture. I have not used the nuts before, but it is quite good and I will add nuts in the future. Turns out great everytime!

Slow Cooker Stuffing

I always make chestnut stuffing, so added chestnuts to the recipe instead of the mushrooms. I added more spices than called for as well. The taste was good, but I'm not sure about the consistency. I missed not having it in the turkey! I did not turn the crockpot to high - which was a good thing, as the outside edges of the stuffing were somewhat burnt. Just kept it on low for 4 hours. I would make it again, but experiment with different types of breads maybe, and work on amount of liquid as well.

Perfect Pumpkin Pie

This was very good! It turned out creamy and delicious. I did add more cinnamon, and like others warmed up the pumpkin and spice mixture before adding the milk and eggs. I will make this recipe again.

The World's Best Turkey

I had high hopes for this after all the wonderful reviews, however we thought it was your average turkey... It wasn't as moist as we expected. We watched carefully for doneness, so I know it wasn't overcooked. But, within 5-10 minutes of seeing it was underdone, the turkey seemed to implode on itself. Very odd indeed. I won't do this one again. I did inject the turkey prior to cooking with broth, garlic, and spices - that was yummy even though the meat was dry.
