About this Cook
I've been cooking since I was "knee-high to a duck" (as they say around here); one of my first memories is helping my dad stir buckwheat pancake batter at the kitchen counter while standing on a wooden crate, since I wasn't tall enough to reach the counter on my own. Now I enjoy trying new recipes for my coworkers, family, and friends. I also co-lead a small group Bible study for my church, and a great pleasure is to supplement spiritual food with physical goodies!
My favorite things to cook
Desserts! Cakes and cookies especially, but I'm always tempted by a good pie recipe too. International cuisine, especially Italian and Indian foods are also favorites, as are good old-fashioned southern dishes, and my slow cooker is one of my best friends.

Salsa Chicken
Tasty, simple, and healthy! I added some frozen corn and a can of black beans to the salsa, plus a packet of taco seasoning; mixed it all together and poured it on top of the chicken, then let it bake for about 40 min. (I lowered the temperature to 350 so it would be more tender). Will definitely make again!!

Easy Slow Cooker French Dip
Easy and Delicious! I took this to a carry-in dinner and everyone LOVED it! I used a can of beef consomme instead of broth and half a can of water instead of beer, a little Worcestershire sauce, and rubbed the 4 lb. chuck roast (good qualitly meat) with garlic powder and meat tenderizer before cooking it on low for about 10 hours. I cooked it the night before then refrigerated it so the fat could be easily skimmed off the next day, then just reheated it before I needed it. Great recipe, will definitely make again soon!

Pumpkin Bundt Cake
Delicious! Like another reviewer suggested, I dusted the Bundt pan with granulated sugar and added pecans to the bottom of the pan. I also added about 1 tsp. of maple extract to the batter. After the cake cooled, I drizzled the top with cream cheese frosting. Really fantastic and easy!
