Pumpkin Stew

This was delicious. It's even better on the second day after all the flavors have mixed with each other. I added some green chillies for a kick. It made for a very filling and spicy winter stew.

Chicken and Broccoli Alfredo

Super easy and very tasty! It tastes even better the next day when all the flavors have blended together. I used rotini pasta as it does a better job of holding the sauce.

Lemon Coconut Squares

Yummy and so easy to make. I've made this three times for office functions. By the third time, the whole thing took less 10 minutes (not including the baking). It's easy, doesn't require fancy ingredients and can be changed to suit you. Instead of coconut on top, I used powered sugar. And I added a few teaspoons of mango or pineapple juice to experiment. It worked out great!

Rice & Beans (Haitian Style)

Awesome! I come from a Haitian family and got used to my dad's cooking. However when I moved overseas, I cursed myself for not learning how to make on the most basic and beloved dishes in Haitian cuisine. This recipe taste just like my dad's, aunt and grandma's du riz colay and now I can make it for my little one. Delicious! Thanks!

Trinidad's Ponche-de-Creme (Punch with Cream)

Great recipe! It was huge hit at a holiday party. One suggestion. I balked at using raw eggs so I put the eggs in a ceramic bowl and placed the bowl in a pot of boiling water. I let them stew for a few minutes. They didn't cook all the way, but enough to pasteurize them for a bit, about 5 minutes. The eggs took on a "custardly" feel and then I used them as the Punch Cream recipe called for. Tasted great and I felt much better sharing it with others knowing the eggs weren't totally raw.

Meatball Nirvana

Chicken Pot Pie IX

I saw the video for this recipe and immediately wanted to try it. I had all the ingredients (except for celery seed - couldn't find it here in Nairobi) and it looked super easy. It was easy and fast. My four year ate it with no fuss and lots of compliments. However, I thought it was a little bland and reading the reviews I have decided to make some changes the next time I make this (and I will). I would bake the bottom crust so it wouldn't be so soggy. I would add some garlic, thyme and poultry seasoning for some more flavor. I would add less flour and a bit more milk. With these changes, I plan to bring this to the next pot luck party I attend.

Spinach Quiche

Loved this recipe because it's not set in stone. I can change (and have in subsequent versions) the cheese, the vegetable and even made a cheese crust for a friend on a low carb diet. Works every time! Love it!

Zucchini Bread IV

First made this bread to see how it would turn out. It turned out wonderful! Then I made it several times and took it as a communal morning snack at work. My coworkers loved it! After making it a few times, I decided to experiment and added 1/4 cup buttermilk. Very moist and even more delicious.

Mie Goreng - Indonesian Fried Noodles

Had all the ingredients since I usually make fried rice a lot. Was even more inspired to make this since I had leftover chicken and pre-cut fresh veggies from the green grocers and that would save me time. The whole thing took 10 minutes to prepare and cook. Turned out great and my son asked for seconds. Will definitely be part of my instant-dinner recipes.

World's Best Pasta Sauce!

OMG! Delicious! I've made this twice and followed the recipe exactly and loved the result. And so did my 4 year old. But like any great recipe, this is not set in stone. In my 3rd, 4th and 5th versions of this sauce, I've done something different due to what was in my fridge at the time and to whom I was serving. I cut the sugar but added red wine, or added ground turkey, tried different veggies or added a cheese rind as another reviewer suggested. While some versions I thought were better than others, all versions were voraciously eaten to those it was served. I've decided to make a huge batch of this sauce once a month, freeze some and use the rest in another pasta recipe. Thanks.

Lemon Pie Bars

The PROS: very easy to make, very zesty and tangy filling THe CONS: super thick (but tasty) crust overpowers the filling This was still a nice recipe and it went over well but next time I make this (and I will) I will double (or 1 1/2 times) the ingredients for the filling and maybe add a little baking powder or soda (forget which one works best with lemon) to "puff" up the filling even more.

Sausage Casserole

Hate bread sausage stratas! Hate them so when I came across this recipe that uses potatoes instead of bread, I had to try it. I liked this recipe but it didn't blow me away. I like to give the rating on the original recipe but when I make the recipe again, I'll alter it to my own taste. So the next time I make this I will add some more spices (salt, pepper, paprika) and I'll use ham just to try something different. But I highly recommend that you try this recipe. It is yummy and I agree with the recipe's creator. It is a great dinner entree.

Banana Oat Muffins

I really liked this recipe. I've made it as is several times for office functions, snacks for road trips or for my family's morning breaks at work or school. It's good recipe, high fiber and relatively healthy. After my 4th or 5th go around with the recipe as written, I made changes based on what was in my cupboard. My favorite change is to add cinnamon, 1/4 cup white sugar and a 1/4 cup brown sugar. I've also added raisins, or linseed, or nuts and at one time, I added all three. It works well every time. I'm inclined to try the applesauce and/or the whole wheat flour as other reviewers have suggested. The trick is to not overbeat the batter. It should be well mixed but not lumpy. And the best way? Don't use an electric mixer. Do it by hand!

Flatlander Chili

I did enjoy this chilli. It was quick and easy with ingredients I generally have around the house. After a few goes, I decided to try something new. I followed the recipe with 3 changes that made a difference to me. I added an extra cup of beans (because I love beans). Then I added a tbsp of freshly ground coffee and a tbsp of unsweetened cocoa powder. Now this chilli isn't just good. This chilli is killer!

Cinnamon Rolls II

I have made this basic recipe several times and have enjoyed the results. However, I went back and read some of the other reviews and decided to incorporate a few of the suggestions just to see how the rolls would turn out with some slight changes. I first followed cory's suggestion to first allow the milk, water and butter mixture to cool and then mix in the sugar and yeast and let it stand for 10 minutes (it got all bubbly and frothy) and then I added the rest of the ingredients. Then I followed mrs.duenes's suggestion of letting the initial dough rest for 10 minutes (for the dough to absorb the flour) before kneading it. Then I let the dough rise after kneading for two hours and then let it rise for two more hours in the morning before baking it. The results were very moist, fluffy and most decadent cinnamon rolls I have ever made. Sometimes it pays to try something new.
