About this Cook
I have lived and worked overseas for the past eleven years. I normally hire people to cook for me but when I have time I like to emulate some of my dad's best recipes or try to make a local dish that I enjoy.
My favorite things to cook
all types of comfort food, stew, pasta, anything with curry, rice and beans, anything with pumpkin or squash, wacky combination salad (ex. chicken and cranberries) I also like to bake. My favorites are apple pie, brownies, lemon bars and bread cakes such as banana or zucchini. I've tried making some bread but it's not my favorite.

My cooking triumphs
For a Thanksgiving dinner with friends, I offered to bring over a pumpkin soup. It was the first time I had ever made a pumpkin soup, or anything else with pumpkin. It was a little spicier than the dinner guests would have preferred but still tasty. They ate the whole thing. I returned home with an empty soup pot and a request for the recipe. I was so proud of myself.
My cooking tragedies
At the last minute, I was invited to a brunch. I decided to keep it simple so I made a Farmer's Breakfast of potatoes, ham and egg. However I didn't cook the potatoes well enough, I added too much salt and I used luncheon meat ham that wasn't as flavorful. It was all that I had in the fridge. I saw people spitting out the food and the hostess threw out my food. I vowed never to cook again.

Cinnamon Rolls II
I have made this basic recipe several times and have enjoyed the results. However, I went back and read some of the other reviews and decided to incorporate a few of the suggestions just to see how the rolls would turn out with some slight changes. I first followed cory's suggestion to first allow the milk, water and butter mixture to cool and then mix in the sugar and yeast and let it stand for 10 minutes (it got all bubbly and frothy) and then I added the rest of the ingredients. Then I followed mrs.duenes's suggestion of letting the initial dough rest for 10 minutes (for the dough to absorb the flour) before kneading it. Then I let the dough rise after kneading for two hours and then let it rise for two more hours in the morning before baking it. The results were very moist, fluffy and most decadent cinnamon rolls I have ever made. Sometimes it pays to try something new.

Flatlander Chili
I did enjoy this chilli. It was quick and easy with ingredients I generally have around the house. After a few goes, I decided to try something new. I followed the recipe with 3 changes that made a difference to me. I added an extra cup of beans (because I love beans). Then I added a tbsp of freshly ground coffee and a tbsp of unsweetened cocoa powder. Now this chilli isn't just good. This chilli is killer!

Banana Oat Muffins
I really liked this recipe. I've made it as is several times for office functions, snacks for road trips or for my family's morning breaks at work or school. It's good recipe, high fiber and relatively healthy. After my 4th or 5th go around with the recipe as written, I made changes based on what was in my cupboard. My favorite change is to add cinnamon, 1/4 cup white sugar and a 1/4 cup brown sugar. I've also added raisins, or linseed, or nuts and at one time, I added all three. It works well every time. I'm inclined to try the applesauce and/or the whole wheat flour as other reviewers have suggested. The trick is to not overbeat the batter. It should be well mixed but not lumpy. And the best way? Don't use an electric mixer. Do it by hand!
