Easy Chickpea Curry

loved this curry. i left out the last 5 ingredients and it turned out yummy. i used full fat coconut milk (coconut fat is good for you) and red potatoes. the only problem was even on low heat w/ the lid on, it stuck a little on the bottom, but not enough to effect the dish. next time i will add chopped cilantro and green tomato chutney and naan bread.

we used puff pastry sheets and cut them into squares and put the squares in muffin tins to make our own shells. we also used brown sugar instead of white.

Cream Cheese Sugar Cookies

i followed the recipe exactly, except for 1 tsp vanilla and no almond extract (i was out). they turned out yummy. i don't even like sugar cookies, but these i love. they are sweet and vanilla-y with a hint of cream cheese. they also rolled out very well. i used cutters for the first roll out and then balled the scraps and pressed a pecan half into the middle. YUM! i wouldn't change a thing, just make sure you chill the dough, that's essential.

Very Chocolate Ice Cream

yummm! this was a very easy recipe and so delicious. it was worth waiting for the custard to get cold and for the ice cream maker to turn it to ice cream. it is very rich, one little scoop was filling. i wasn't sure about the cook until thickened part (after adding the egg yolks): i cooked it what seemed like a long time and it only got a little thicker. but it turned out great. i substituted milk chocolate chips for the unsweetened chocolate and i put the custard in the freezer instead of the fridge by mistake; turned out fine. i would definitely make this again. we served it with sliced bananas.

Apple Raisin French Toast Strata

this was really good. i made a few changes: used a bunch of stale homemade bread cubes, some super dry; used half the cream cheese in cubes, 6 eggs, baked in a smaller glass baking dish, about 1 1/2 cups milk and whipping cream mixed, 2 tbsp. butter, forgot the maple syrup completely. amazingly, it turned out really good and the whole family loved it. some recipes are just immune to tinkering, this must be one.

Overnight Caramel Pecan Rolls

caramel rolls are the best! these always turn out and are relatively easy, you just have to start the night before and get up early to let them rise in the morning. i use 2 cups of whole wheat flour and brown rice syrup instead of corn syrup to make them a bit healthier, and i use walnuts instead of pecans. they fill two 9 x 13 pans, so they're great for a crowd. they make a big hit on a holiday, birthday or sleepover morning. my daughter always requests these rolls for her birthday.

Honey Wheat Bread III

this bread rose incredibly high. i doubled the recipe and got two fat loaves. i added about 1/4 cup each of ground flax and wheat germ and it turned out great. i also made it in my kitchenaid mixer with the dough hook. it didn't need hand kneading with this method

Angel Biscuit Rolls

My family loves these biscuits, and they are our favorites. I like them because they are very fast, and make a lot. I usually freeze the extras. I use my kitchenaid mixer to mix all the dry, then mix in very soft butter (instead of shortening), then the yeast and the buttermilk. The dough is really sticky, so I always add a bit of flour and then they are perfect. I also use 3 cups white flour, 1 1/2 cups whole wheat and a 1/2 cup oat flour (just grind whole oats in your blender). This makes them a bit healthier and we like the more hearty flavor. They are still very fluffy even with whole grains, and even if you mix like crazy.
