Simple, healthy, inexpensive, delicious. I also sweated the slices as previously described. I decided not to make the casserole. Instead, I added the parm cheese to the bread crumbs. I baked the breaded eggplant on a cookie sheet for about 30 mins turning half way. Then I served it like chicken parm with sauce and mozzarella cheese on top. I also added some portabella mushrooms to some store bought sweet basil sauce for a twist. The eggplant was tender in the middle and crispy on the outside. Husband rated it 10/10, yummy!
