Italian Love Cake

Strawberry Spinach Salad I

Great salad and dressing. Leftover dressing keeps for about a week. I used some leftover dressing in a chinese chicken salad, taseted wonderful!

Easy OREO Truffles

These are great for parties. They are very rich, so the smaller you make the balls, the better. I use a tiny cookie scoop (which leaves one side flat) so that they have a uniform size and sit nicely on the serving tray.

Spinach Salad with Warm Bacon-Mustard Dressing

Great way to get almost anyone to eat spinach. Only tip, the dressing has a very strong vinegar taste/odor. Preparing earlier in the day and allowing it to marinade eliminates this.

Amazing Italian Lemon Butter Chicken

As the other reviews stated, the final product is very greasy. It is VERY difficult to keep the sauce from separating before you serve it. This trait also makes the dish no good as leftovers (it looks like straight butter/oil and noodles). With that said, it was good; I'm just not sure if the taste is worth all the calories and fat grams!

The best! I make these as cupcakes and they come out perfect. I use golden raisins and boil them in sugar water for 5-10 minutes until they are nice and plump (really makes a big difference.)

Cream of Coconut Cake

Cake was great, very moist. I added 1/2 cup flaked coconut and 1/2 t. coconut extract to the batter. The frosting was more of a glaze. I had to throw it out and start over with a different frosting.

Bacon Wrapped Water Chestnuts III

Slight tweak to recipe eliminates soggy bacon problem. Pre-cook bacon in microwave, wrap chestnuts while bacon is fresh from the microwave and still pliable. Cover with sauce and bake for 30 minutes.

Never Fail Pie Crust II

Great recipe, very easy. I tried this with a lemon meringue pie. I am not sure which was more delicious, the pie or the crust. It holds up very well with heavy fillings, it has a shortbread-like consistency. I am looking forward to trying this with a chicken pot pie.

I used regular salted butter and the squares turned out extremely salty. I would cut the butter in half (at least) and use non-salted butter.

Strawberry-Lemon Cream Puffs

The puff recipe is standard, and produces good puffs; however, the filling is soupy and keeps the odd yellow/cream color of the evaporated milk. If you are looking for a pretty, light, whipped filling, this is not it. In addition, the flavor is very contrived (thanks to the huge amount of lemon extract.) It may be better with the use of a combination of lemon zest and lemon juice. I prefer more of a whipped filling, and was disappointed with both the flavor and consistency of the end product
