Quinoa and Black Bean Chili

I had never had quinoa before, and I am not a big bean fan. I found this meal to be fabulous! The only thing I did was omit the chipotle peppers, and just added some adobo sauce. My husband (who likes MEAT!) was also a fan of the dish - but he did stir in cheese. I highly recommend this as a fall/winter meal to get lots of veggies and grains with a nice texture and taste.

Salsafied Chicken and Rice

This was quick and tasty! I did cut back the cheese to make it lower in fat, and served it with low fat sour cream.

Sweet Potato, Carrot, Apple, and Red Lentil Soup

This soup was an adventure for me. I've never really ate lentils, I am not an experienced soup maker, and I didn't even own cumin. I was convinced I would not like it; however, I think it is delicious. I did have to make some minor changes based on what I had on hand and could find at the store. I used regular lentils and chicken broth. I also cut the chili powder in half because I was concerned about it being too spicy. Next time I make it I will go with the full amount of chili powder.

Sauteed Apples

This recipe is delicious as written, though I'll admit I didn't measure the cinnamon - I just sprinkled it on. I made half the recipe and served it with pork chops and stuffing. Quick, easy, delicious!

Chocolate Butter-Creme Frosting

This frosting is fantastic! It has a nice chocolate flavor to it without being overly chocolately. I also like that it makes a small amount. So many frosting recipes make a whole bucket full! I always add the milk 1/2 T at a time to make sure it doesn't end up runny. However, I've never had this recipe turn out runny and I've made it 3 times in the last month! It's my new quick favorite for cupcakes!

To Die For Blueberry Muffins

I make these muffins all the time! They are wonderful. These muffins taste like tiny blueberry coffee cakes. They are always a hit with my family, friends, and co-workers. I highly recommend this recipe. I will also note that when fresh blueberries are out of season or too expensive frozen blueberries that are thawed and dried work well. I recommend coating frozen berries in a small amount of flour before folding into the batter to prevent having a pink or purple tinted batter.

Russian Mushroom and Potato Soup

I must start with upon looking at these ingredients I knew there was no way I would eat this soup. However, I knew there were a number of gentlemen in my life who would likely enjoy it. The soup tasted wonderful according to my dad and brother-in-law. My mom and I thought it was gorgeous to boot! They both really enjoyed the dill seasoning and thought the butter made the soup rich and creamy without being too overpowering. I will admit due to necessity I substituted onion for the leak.

Easy Cheese and Garlic Scones

I made these savory scones for work recently after a co-worker went to New Mexico. I added 1/3 c. of canned green chiles (I mixed them into the milk) for a south western flare. They were a hit at the meeting!
