Quick Poached Salmon with Dill Mustard Sauce

The sauce was fantastic! I didn't have plain yogurt so instead I used low fat sour cream. I also decreased the amount of lemon juice like some reviewers recommended. This was my first time poaching fish and it turned out well!

Creamy Smoked Salmon Pasta

I had some cream leftover, so instead of 2 cups of skim milk, I used 2/3 cups of cream and 1-1/3 cups of skim milk. I didn't have romano cheese, so I used parmesan petals. I used one whole onion, chopped up 2 cloves of garlic and decreased the amount or garlic powder. I also used 1-3/4 cups of peas and omitted the mushrooms. Overall it was good, but I think there's still some room for improvement.

Scottish Bubbles and Squeak Patties

I took this to a Scottish-themed potluck and everyone loved it! I tripled the recipe and didn't have enough cheddar, so I added some Parmesan petals. The only problem I had was that the patties kept on sticking to my electric skillet, so they got a little misshapen in the cooking process. I'll have to try cooking them on something else in the future.

Avocado Pie

Like other reviewers said, I added a brick of cream cheese and used a larger can of condensed milk. I also didn't want it too lemony so I used 1/4 cup lemon juice. Was great with the modifications!!

Green Tea Layer Cake

I bought matcha when I was in Japan and decided to try out this recipe. I ended up making 15 large cupcakes from this recipe. I didn't have cake flour, so a known substitute for 1 c cake flour is 1 cup all-purpose flour minus 2 tablespoons, PLUS 2 tablespoons of corn starch. I used 1/2 c applesauce and decreased the oil to 1/2 c. I don't like things being too sweet so I decreased the sugar to 1 c. If the cupcakes were eaten alone, they would have needed the full amount of sugar, but with the icing, it was just perfect. I used 4 oz cream cheese in the icing and I had a lot of icing for the 15 cupcakes. While this made a nice and moist cake overall, there still wasn't enough green tea taste and I would add more matcha in the future.

Orzo with Parmesan and Basil

I used the whole bag of orzo, which tripled the recipe and adjusted everything else accordingly. Instead of basil, I added a couple tablespoons of leftover pesto from the freezer. Will definitely substitute pesto for basil the next time I make this! Delicious!

Pumpkin Muffins II

I used 2 cups of canned pumpkin instead, and they turned out really well. I also added 1/2 cup of chopped walnuts and 1/3 cup of golden raisins. Instead of 2/3 cups of oil, I substituted 1/3 cup of applesauce and 1/3 cup of oil. It could have made more than 12 muffins, but I filled my tins all the way to the top, and they needed about 12 more minutes of baking time.

Grilled Salmon I

I didn't have lemon pepper, so I brushed the filets with about 1/3 cup of lemon juice prior to seasoning with garlic powder, salt, and pepper. I marninated the filets in a baking dish, and only ended up using half of the marinade. I'll be saving the rest for another day!
