Uncle Josh's Famous Chicken and Rice

If only it tasted as good as it smells. It's very bland and definitely missing something. If I were to make it again, and I doubt I will, I would probably cut the cumin in half and add some garlic.

Dark Chocolate Cake I

This a great chocolate cake recipe. I used dutch processed cocoa rather than regular and it gave it a wonderful dark chocolate flavor. I've never been able to do a layered cake because the cake always stuck to the pan, but thanks to the suggestion below to line the pans with wax paper, it turned out perfect!

Mediterranean Lemon Chicken

Penne with Spicy Vodka Tomato Cream Sauce

Delicious recipe. I used hot italian sausage rather than sweet and added crushed tempin's rather than red pepper flakes. Makes for a much spicier recipe. The sauce needs to be simmered down more than recommended in order to make a thicker sauce.

Chicken Flautas

This recipe is a great starting point for yummy flautas. I marinated the chicken in a mixture of lime juice, red chile powder, garlic and olive oil. Then grilled it. I also used two 16 oz. bottles of picante sauce, doubled the cumin amount and added 2 chopped jalapenos for spice. Rather than mixing the chicken directly with the picante sauce mixture, I just dabbed the picante sauce onto the tortilla and chicken by itself. I think this gave it more flavour and made it juicier. I also didn't use cheddar cheese... just shredded jack. And served them with jalapeno jelly.

Mushroom Pork Chops

The pork chops were very bland. Next time I would sprinkle them with garlic and possibly oregano or some other kind of spice. The sauce was very tasty over rice.

Brown Sugar Meatloaf

I added garlic and green onions instead of regular. I'm not usually a big fan of meatloaf as I find it be dry and bland. However, this was very moist and tasty. I will definitely make it again.

Chicken Enchiladas I

General Tsao's Chicken

This is a really yummy recipe for General Tsao's Chicken. My only suggestion is to add asian chile sauce to the cooking sauce when making it, so that it's spicier.

Bunyaculta

I'm amazed to see this recipe here. It is an old recipe passed down in our family and we call it Bunyaculda, but it is the exact same recipe. It is delicious, especially with green peppers and italian bread. But, just as Nita warned...it's very garlicy and you'll stink for weeks after. P.S. I've seen it spelled a million different ways... another version is Bagna Caöda.
