Gourmet Mushroom Risotto

This dish is absolutely delicious! I don't add the butter and it still comes out creamy and delicious. I've also done zucchini/feta instead of mushroom. Soo good!!

Refried Beans Without the Refry

OMG!! These beans were soooo good, and is soooo easy!! They had amazing flavor, and it cost me under $1.50 to make it!! I'm never buying canned beans again!

Hot and Sour Chinese Eggplant

This is absolutely delicious! I have made it twice, and used brown sugar both times instead of white and it was great! The first time I added shrimp and mushrooms, and the second time chicken, onion, and bell peppers. I tripled the sauce both times as well as I like extra sauce and it was just the right amount.

Penne with Spicy Vodka Tomato Cream Sauce

Delish! I used 1/4 C non-fat milk and 1 T low fat cream cheese instead of the cream, and it still tasted great, and cut the calories/fat down significantly.

Amazing Whole Wheat Pizza Crust

This turned out great! I make pizza for my roommates all the time and have been looking for a good whole wheat pizza crust. I was worried because the dough didn't quite double in size and didn't puff up at all after I baked it, but it was a little crispy on the outside and still soft on the inside. I will definitely be using this recipe from now on!! Oh, and I used all whole wheat flour instead of using some all purpose flour

Peanut Butter Temptations II

I didn't have a mini cupcake pan, so I just baked as normal cookies and put the peanut butter cups in the middle. I put the cookies in for about a minute to let the peanut butter cup melt, and they looked like sandies. They were absolutely delicious!!

Sooooo good! I make cookies for my roommates all the time and thought I would give these a try. They LOVED them. One said they were her new favorite. I tested my baking soda and it was bad and was worried the cookies would come out flat, but they were still fluffy! I used all butter (instead of half shortening). I will definitely be making these again! mmmmm

Yum!! My mom was having family over and my sister and I said we would cook. We came upon this recipe and thought we would give it a try. I was nervous at first because it didn't smell that great but when it was all done it tasted great! Everyone loved it.

Szechwan Shrimp

This was sooo good! I doubled the ingredients for the sauce as other suggested, but realized after I should have since I was only cooking for myself. I made about 2 servings to have left overs and there was plenty of sauce, but it tastes so good so I don't mind! I didn't use green onions because I didn't have any, but I"m sure it would add some flavor. I will definitely be making this again!

Spinach and Mushroom Quesadillas

This was delicious. I added onions and a pinch of red pepper flakes (I like a little heat). I also ate it with some salsa I had and it was great! I had mushrooms I needed to use up and luckily some frozen chopped spinach in the freezer that I used. I will definitely make this again! (I also didn't use the oil as others had mentioned).

Black Bean and Corn Quesadillas

Delish! I was planning on making just a black bean, corn, and cheese quesadilla, but I found this and it spiced up my idea. I left out the onion since I don't like onion, and didn't have any red pepper flakes, and so I added a little bit of garlic powder (I LOVE garlic). YUM!

Very good! I used fruit I had - mangos, pear, and strawberries. It was very good. I didn't put any preserves. I loved the cinnamon sugar chips with the fruit!

Homesteader Cornbread

It was really good. I think I did something wrong though because the cornmeal was crunchy in the bread, and did not taste good at all. I used polenta instead so maybe that was my problem? Or maybe I didn't let it soak long enough in the milk?

Award Winning Soft Chocolate Chip Cookies

These were absolutely AMAZING. At first I thought it was a ton of butter, but the recipe made so many cookies. They are so soft and delicious. I made some with white chocolate chips, and some with half semi-sweet half milk, and some with a combination of all three. I love white chocolate, which is why I made some with white chocolate chips. My younger sister bakes cookies all the time and always used the same recipe. I asked her to make these with me, and this is now her new recipe. YUM!!!
