Spiced Plum Pork Chops

This was wonderful - a great mix of flavors! I didn't have just pineapple juice but I did have a can of crushed pineapple so I got as much juice from that as I could and then just used enough crushed pineapple to make 3/4 cup. Worked great! This would be a wonderful recipe for a pork roast, pork chops, etc. I was worried there would not be enough liquid, but the plums cooked down quickly and it was just fine for 3-4 pork chops. If I made this again with a larger cut of meat like a roast, I would probably have to add more liquid - maybe apple juice? We had leftovers so I shredded up the rest of the pork chops and then mixed a bunch of the plummy sauce into it - AMAZING. Better than the pork chops alone. Can't wait for plummy pork sandwiches tomorrow!

Pancetta Wrapped Shrimp with Chipotle Vinaigrette and Cilantro Oil

I was looking for the main attraction for a 4 course Mother's Day brunch and stumbled on this recipe. WOW!!! These were a hit. I made them again the very next weekend they were so great! The only change I made (on accident) was instead of making the cilantro oil and then the chipotle vinaigrette seperatly, I made it all together (so it was Chipotle Cilantro Vinaigrette). It tasted great and I didn't see a reason to keep them seperate if you're going to pour both on the shrimp. Just be sure to grill the shrimp long enough. I was concerned I would over do it and pulled the first batch off the grill a little early. Make sure the pancetta (Italian bacon) is nice and done and the shrimp will be perfect.

Cranberry Pistachio Biscotti

Amazing and beautiful too! Made these exactly as the recipe says and they are to die for. Pistachio's do have a distinctive taste, so if you're not a fan use almonds. Made a second batch with this as the base but added almonds and cocoa powder in place of cranberries and pistachios - still good but needed something. I will use this as the base for all my future biscotti making. Perfect texture - nice crunch but won't crack any teeth. ;)

Sugar Cookie Icing

Love this recipe! I often use lemon juice or some other extract in place of the almond and it's just as good. I do add a pinch of salt too, and I find that really sets the taste off.

Gazpacho II

I've had gazpacho a few times and some recipes I LOVE (the blended ones) and some I don't care for (when everything is just chopped). This is a perfect combination - I food-processed the base and then added some chopped veggies at the end for crunch and texture. This is exactly what I was looking for - the vinegar gives it that perfect taste. I skipped the croutons and just served it with rustic bread, and I added one clove of raw garlic into the pureed veggies, and this is a new favorite or mine. I will definitely make this again. And again and again! A crowd pleaser and a great way to use up tomatoes from the garden. I halved cherrie tomatoes and threw those in at the end along with the other chopped veggies. YUM.

Authentic French Meringues

Very good, but would have been better with some type of flavoring - cocoa powder or almond extract or something. I will make these again the next time I have a recipe that just calls for the yolks.

Mom's Best Peanut Brittle

Fantastic recipe! I made one batch with vanilla and one without and I prefer NO vanilla. It tastes more like traditional peanut brittle. And I did one batch with 1 cup peanuts and one with about 1 1/4 to 1 1/2 cups, and I preferred just 1 cup of peanuts. It's plenty and they didn't overpower the candy part, which I happen to like. Great recipe! This will become a staple for holidays and gifts!!

Dawn's Candied Walnuts

I had a bunch of walnuts in my freezer but needed candied walnuts for a recipe and I stumbled on this recipe. Wow! These are great. And they're actually really easy to make. I was worried about whether or not I'd be able to get to "soft ball" stage without a candy thermometer, but the water test actually worked great (my first time using that!). I used half the cinnamon and added 1/8 tsp cayenne pepper because I'm using these in a salad and I was afraid the cinnamon might be overpowering. They came out great, but I would do the full 2 tsp of cinnamon if I were making these just to eat. HINT: Make sure you roast your walnuts long enough. I took mine out a little too early and my walnuts don't have that nice crunch I was going for, but it doesn't affect the taste. This is a keeper - way cheaper than buying candied walnuts!! Thanks for posting this!

Avocado Shrimp Ceviche-Estillo Sarita

This is AWESOME! I just had ceviche for the first time at a restaurant last night because I had always been to scared to try it and I fell in love so I was determined to make it at home tonight. This recipe was better than the restaurant! I left out the ketchup and the crackers, but that's all I changed. I used some tomatoes from my garden and some Romas from the store. I will most definitely be making this again, and probably for guests! It's sure to wow people and can be made ahead of time. LOVE THIS - a new summer staple a long as their are tomatoes in the garden.

Zucchini Patties

These are AMAZING. I was looking for recipes to use up all the zucchini from my garden and was getting tired of breads and muffins. Bonus - my daughter thinks they are pancakes and will eat them, even with the hidden veggies! YUM. A new favorite in our kitchen.

Special Buttercream Frosting

Great texture and easy to pipe with, but not a lot of flavor since there is no butter. Would probably be a great base if you add extracts, crushed oreos, etc. I will probably make this again and add something to give it more flavor.

Slow-Cooker Chicken Tortilla Soup

I've made this quite a few times and it is wonderful! So easy and cheap to make, and just as good, no-better, than anything you can buy or get in a restaurant. I often add extra vegetables too, depending on what I have in the house - frozen okra, fresh zucchini, canned black beans... whatever. It's all great in this recipe! This is now a staple in our house. I make an extra large batch and put a bunch in the freezer for those days when we don't want to cook.

Chai Tea Mix

OH...MY...GOSH! I'm sipping it right now and this is AMAZING! Better than anything I've bought in a grocery store. And the only reason it's not better than Starbucks is becase I made this one with water. Will try mixing with milk tomorrow morning for that extra creaminess. Yum! (my food processor worked great - don't bother with the coffee grinder) Changes: I'm trying to cut calories so I used all non-fat creamers (probably also why mine isn't quite as creamy). I also used Splenda instead of sugar. Can't tell the difference! I cut back to 2 cups of Splenda so I could use some honey without it being too sweet. It's perfect! Also added the white pepper and nutmeg. LOVE IT! I will make this as gifts for Christmas it's SO great. UPDATE: I made this with milk this morning for a Chai Tea Latte - it's great! Nextime I will cut the sugar even further to 1.5 cups - a little sweet when made with milk.

Amazingly Good Eggnog

Great taste, but not thick at all. I left out the rum and let people add their own so I can't speak to whether o not 2 1/2 cups was too much or not. Also, I kept the egg whites and beat them until meringue-like and then folded it in to increase thickness. You could do the same with the cream if you don't want to add raw egg whites.

Simple Scones

LOVE these scones - these are way better than anything I can buy from any coffee shop or grocery store. Great mix of sweetness, but not too cakey like so many store-bought scones are. This recipe is a staple in my kitchen - cranberry orange is one of my favorites, but blueberry is great, and so is lemon poppyseed. I usually make a large batch so I can grate the frozen butter using the grating blade in my food processor - then I either freeze the extra scones, or more often share them with coworkers or friends. They are always a bit hit.

Fresh Southern Peach Cobbler

This is a great recipe, but if you use more peaches than called for to make a bigger batch, you may want to double the topping recipe. No need to double the sugar on the fruit - it's still delicious! This was a hit, and very easy to do!

Just made this - added a splash of vanilla and a sliced apple in the pan before I cooked it. SOOOOO good! And super easy. This is a new breakfast favorite due to the few ingredients and super easy process. LOVE love it.

Best Brownies

Made these last night and just ate one. Made them according to the directions, including the frosting (except only used 1 cup of confectioners sugar and a little milk to thin). Very unimpressed. Don't get me wrong... they are good, but not impressive. They tasted like store-bought packaged brownies (not even store-bough bakery brownies!), and in my opinion nothing homemade should ever taste like packaged food. I'll keep the recipe for those chocolate cravings when I don't have any special ingredients in the house, but won't make again when I'm trying to impress myself or others. A little bummed since this had such high ratings. Oh well... it is nice to have a recipe that's so simple and I almost always have all these ingredients. Maybe I can work on it by adding melted chocolate to the batter and working on the frosting or something. We'll see.

Rosemary Shortbread Cookies

I've made this twice now, and it's a favorite! I made it once with some lemon glaze on top, and once plain just as the recipe describes. Both are delicious - without the glaze they are perfect with tea or coffee because of the texture. I LOVE these cookies! :) They always impress because they are so unusual for most people.
