Dutch Babies II

Just made this - added a splash of vanilla and a sliced apple in the pan before I cooked it. SOOOOO good! And super easy. This is a new breakfast favorite due to the few ingredients and super easy process. LOVE love it.

Shrimp Scampi Bake

DELICIOUS! I made this as-is except cut the butter to 1 stick and 1/2 the mustard and it was awesome. My three-year-old ate 6 shrimp and said it was her favorite, and it was a hit with everyone else too. This is a new stand-by.

Vikki's Red Bean Sausage

First I'll caveat, that I made a lot of revisions because I didn't have all the ingredients. This review is based on the flavors in the recipe - they are great! I didn't have red kidney beans so I used one can of cannelloni beans (white kidney beans), and I put some leftover brown and wild rice mix I had in since I was short on beans. I used fresh parsley because I had it. I only used a sprinkle of cayenne because I don't like heat, 1/2 teaspoon of black pepper, and a can of diced green chiles in place of fresh chiles. The flavors were amazing! Even with only a sprinkling of cayenne there was just a touch of heat (perfect for me) so I can't imagine how hot this would be with the full amount plus fresh chilies. I am keeping this - it's a perfect recipe to make as-is (minus some heat) or alter to suit whatever ingredients you have on hand.

Best Brownies

Made these last night and just ate one. Made them according to the directions, including the frosting (except only used 1 cup of confectioners sugar and a little milk to thin). Very unimpressed. Don't get me wrong... they are good, but not impressive. They tasted like store-bought packaged brownies (not even store-bough bakery brownies!), and in my opinion nothing homemade should ever taste like packaged food. I'll keep the recipe for those chocolate cravings when I don't have any special ingredients in the house, but won't make again when I'm trying to impress myself or others. A little bummed since this had such high ratings. Oh well... it is nice to have a recipe that's so simple and I almost always have all these ingredients. Maybe I can work on it by adding melted chocolate to the batter and working on the frosting or something. We'll see.

Grandma Johnson's Scones

Just made these as lemon poppyseed. Delicious! I ran out of eggs so used 1T flax seed meal mixed with 3T warm water (let it sit for 10 minutes), and they still came out great! The texture is wonderful. Slightly cake-like, but slightly crumbly. A wonderful scone. Mmmm... this made a lot so I baked half and froze half (raw) to make whenever I want later. I usually make a different recipe that doesn't require sour cream, and now I have two favorites depending on what I have in the fridge.

Sour Cream Coffee Cake III

I made this as written with one exception - I ran out of vanilla extract so I used the seeds from 1 vanilla bean instead. I thought the cake was slightly to sweet (and I like sweets!) and there was not enough topping. I made it in a 9x9 pan and it came out well, though had to cook it a little longer. My batter was REALLY thick - maybe I beat the butter and sugar together too long/ much or was everyone's that way? The cake part came out with fabulous texture though so other than the challenge of spreading the batter, it was fine. I might make this again but I'll make adjustments to it. I'd say it's about 2/3 of the way to being like Starbuck's traditional coffee cake.

Rosemary Shortbread Cookies

I've made this twice now, and it's a favorite! I made it once with some lemon glaze on top, and once plain just as the recipe describes. Both are delicious - without the glaze they are perfect with tea or coffee because of the texture. I LOVE these cookies! :) They always impress because they are so unusual for most people.

Caramel Frosting V

Holly cow, this is the BEST frosting I've ever had in my life. 10 times better than the local cupcake shop's caramel frosting. I only gave it 4 stars though because the instructions seem to be a bit off. As with many of the other reviewers, I put mine in the fridge overnight and then whipped it up in the morning in my KitchenAid mixer. I also had to add some powdered sugar to stabilize it. Not sure how much I added - spoonfuls until it didn't ooze so much. But the powdered sugar didn't really change the taste much, so it was still AMAZING. Entirely worth the time and effort. If the instructions accounted for the powdered sugar and the time it takes to cool, this would be 5 stars. 10 stars if I could give that many!! My new fav!

Eggless Tofu Spinach Quiche

This was a little salty for me, but great! I'll cut back on the salt next time. You can't tell it's tofu. I made mine with fresh spinach, mushrooms, and fat free cheese, and then poured it into an 8x8 glass baking dish (no crust). DELISH! I did have to cook it a LOT longer than listed but maybe I had too much liquid in it, or maybe it was too thick in the dish. Either way, it still came out fine. I want to make this again in muffin tins for on-the-go breakfast, but not sure if it will cook and set right. Worth a shot though!

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

OH MY! This was AWESOME! I cut the chili powder in half because I don't like too much spice and we have a toddler and it had NO heat with half the amount. Easily could have used a little bit more. Also, the glaze made A LOT - would make 1/2 or 3/4 a recipe amount (Note: we don't drown our pork in the sauce when eating, but if you do then make the full recipe.) This is a new staple in our house.

Sugar Cookie Icing

Love this recipe! I often use lemon juice or some other extract in place of the almond and it's just as good. I do add a pinch of salt too, and I find that really sets the taste off.

Easiest, Most Delicious Meringue Buttercream

I really wanted to love this, but it's just not that great. I didn't use all the butter and it still really tasted like butter, so I'm glad I didn't use it all! (It didn't taste bad, but it would have if I had used it all). Then I couldn't get it to firm up (maybe because I didn't use all the butter?) so I ended up having to add a lot of powdered sugar to get it stiff enough to frost a cupcake and not have it dripping off the sides. And I DID beat it forever with a stand mixer hoping it would firm up, but it never really did. It did taste great, but the texture was a deal-breaker.

Chicken with Mushroom Sauce

My husband, who usually only BBQs, made this for dinner - DELICIOUS! This is a keeper. Right after dinner I went to the computer to save the recipe and write this review. This is a keeper and we WILL make it again soon - the sauce would be nice on fish too.

The Best Rolled Sugar Cookies

These are wonderful! Make them nice and thick and they will come out perfectly soft and delicious. YUM YUM. This is my new staple recipe. They roll out great and the dough was easy to work with, as long as it was dusted with flour.

Aunt Teen's Creamy Chocolate Fudge

Great, easy recipe that will turn out some delicious fudge, but I'm still on the hunt for a "to die for" recipe. To me, this tastes like that really great fudge that your friend made and brought to a party, but NOT that "to die for" fudge you had at the Boardwalk/Shore/Apple Hill/local treat shop. Might make again. but not if I can find something better. Will look for a recipe that doesn't use the marshmallow cream and see if I can make the "real" stuff and get the texture right.

Gazpacho II

I've had gazpacho a few times and some recipes I LOVE (the blended ones) and some I don't care for (when everything is just chopped). This is a perfect combination - I food-processed the base and then added some chopped veggies at the end for crunch and texture. This is exactly what I was looking for - the vinegar gives it that perfect taste. I skipped the croutons and just served it with rustic bread, and I added one clove of raw garlic into the pureed veggies, and this is a new favorite or mine. I will definitely make this again. And again and again! A crowd pleaser and a great way to use up tomatoes from the garden. I halved cherrie tomatoes and threw those in at the end along with the other chopped veggies. YUM.

Avocado Shrimp Ceviche-Estillo Sarita

This is AWESOME! I just had ceviche for the first time at a restaurant last night because I had always been to scared to try it and I fell in love so I was determined to make it at home tonight. This recipe was better than the restaurant! I left out the ketchup and the crackers, but that's all I changed. I used some tomatoes from my garden and some Romas from the store. I will most definitely be making this again, and probably for guests! It's sure to wow people and can be made ahead of time. LOVE THIS - a new summer staple a long as their are tomatoes in the garden.

Zucchini Patties

These are AMAZING. I was looking for recipes to use up all the zucchini from my garden and was getting tired of breads and muffins. Bonus - my daughter thinks they are pancakes and will eat them, even with the hidden veggies! YUM. A new favorite in our kitchen.

Wheat Germ Whole-Wheat Buttermilk Pancakes

Pretty good, but you must like wheat products. If you are not a fan of wheat bread, this might be to "wheatie" for you. I loved them though and they were WAY more filling than regular pancakes. I will definitely make these again.
