Remarkable Fudge

I have used this recipe for decades. It is a terrific recipe that makes nice creamy chocolate fudge. It always gets raves from friends. The only difference is that I use 1 (12 oz) can of evaporated milk. (I don't like odd amounts left over, and I've never felt that it affected the outcome.) The real key to success is to always use a candy thermometer, and to always check the boiling point of water at the time you make the fudge. It varies each time. For example: Boiling point is 212 degree F. Today it was 8 degrees lower. That meant I needed to stop cooking the fudge at 228 degrees rather than at 236 degrees (soft ball stage). Therefore, it is critical that you always boil some water and check the boiling point before making candy.

Pretzel Turtles

These are fantastic. One of the things that makes them nice is that you can make any amount you wish in minutes. (If you are dieting, you don't need to have a lot of leftovers to temp you.) We are going to a play this evening with friends. One of the attendee is fixing dinner and asked me to bring dessert. Since most people do not want dessert immediately after dinner. I fixed a bag of rolos, giving me 59 pieces. I divided them into six decorative boxes and will wrap with ribbon. Each person will have his/her own box, and thus, can have a dessert right after dinner, during intermission at the play or tomorrow. I did something similar last month with different candies, and it was a big hit.

Pork Chops for the Slow Cooker

I thought this was excellent. As others have said the sauce was outstanding over rice. I did make one significant change. Since I did not have soy sauce in the house, I used Teriyaki sauce. It was still excellent, except that next time I would use less brown sugar to cut down on the sweetness. I also added onions and about 30 minutes before the end I tossed in some green peppers. Both the onion and green pepper added more interest to the rice. Thanks for the recipe.

Three Bean Salad

I don't like giving a bad review, but I followed the recipe except for adding fresh garlic and white onions. I periodically tasted the mixture over 15 hours and discovered it had no taste. I went back and added the garlic powder and onion powder that I had not originally used because I was using them fresh. I then added cayenne pepper, which was an optional ingredient. I still was unhappy. Also, I did use the canned green beans as was recommended and felt the texture was off. I would recommend using frozen green beans. In any case, I won't be making this again.

Homemade Twinkies®

These were outstanding. I made them as cupcakes, taking a wedge out from the top, enlarging the hole a bit and filled it with the filling. I then sliced a bit off the bottom of the section of the top I removed. This made it fit back into the hole better. To make the cupcake more attractive, I made a cream cheese frosting flavored with lemon for the top.

Garlic Green Beans

This is an easy and outstanding recipe. I was looking for a recipe that didn't have soup, sour cream or cream cheese in it. I did cut down on the amount of butter and olive oil used as suggested by others, and I used fresh green beans, since that's what we prefer. In the afternoon, I steamed the beans for about four minutes to set the color, and then followed the recipes directions for assembly. Then I set it all aside, keeping it all in the sauce pan. At dinner, I simply reheated and finished cooking the beans, cutting down on fiddling around at the last minute. It was a wonderful addition to a beef tenderloin dinner.

Best Chocolate Chip Cookies

I think this is an outstanding recipe, and it has become my favorite for chocolate chip cookies. I did follow the suggestions of using 1/2 c. white sugar, 1 1/2 c. brown sugar (changing the ratio slightly), added the soda to the dry ingredients (simplifying) and added 1 T. vanilla eliminating the water. In place of the walnuts, I added about 1 c. of dried cranberries. I love the play of the tart cranberries off the chocolate. The last time I made them, I gulped and used the convection oven (new to my kitchen) and did three sheets in about 12 minutes. They were outstanding, and I will certainly bake using the convection feature again.

Cheesy Ham and Hash Brown Casserole

This is a wonderful casserole. I served it New Years Day, and everyone loved it. I think it's great as it is. However, I can see where it can easily accommodate additional ingredients. I will try adding onions and red and/or green peppers next time. Thanks for submitting this recipe.

Chocolate Chocolate Chip Cookies I

This is an outstanding recipe. Following other reviews, I did use 1/2 white and 1/2 brown sugar, and because I used all butter, I chilled the dough for an hour. I also added dried cranberries, which is a great combination with the chocolate. Also, I was careful to underbake them (about 8 minutes) to keep them soft. After 3 days, the cookies remain soft, even the chocolate chips. If you happen to overbake an item, you can put it/them in a plastic bag and add a slice of bread. I usually place the bread on a piece of wax paper so it doesn't sit directly on the item. If it physically touches the item, the item will get very soft and a bit mushy. Thanks for the great recipe. Everyone loved them.

Fig and Olive Tapenade

This is an outstanding recipe. I hate, hate, hate olives, but I love the flavors of this recipe. I followed the recipe closely, but based on comments by others I did use fresh herbs and served it over goat cheese. It was a nice addition to my usual array of holiday party appetizers and one that will become a tradition each year. Additionally I'll serve it at other times for something unusual. Kudos to Anne.

Beef Tenderloin With Roasted Shallots

I prepared this for Christmas Eve, never having cooked a beef tenderloin previously. It was fabulous. I followed the directions pretty much as written except, like others, I made the sauce a bit earlier since Christmas Eve is a bit busy. The sauce was outstanding. I served herb roasted small potatoes with it and that was a nice accompaniment. I used the leftovers for a stew with the sauce as a base. Everyone loved the original and the leftovers. Thanks for posting the recipe.

Triple-Chocolate Cookie Balls

I think they are absolutely delicious, easy to do and the fact that it requires no baking is a plus. I'm anxious to try other combinations, and I may try a suggestion one reviewer made to change the ratio a bit of cookie to pudding. They would make a wonderful addition to a party buffet.

Tortellini Bacon Broccoli Salad

This is awesome, and it's always nice to have a recipe that can be made a day ahead. The only thing I did that wasn't in the recipe was that I steamed the broccoli for 30-60 second to set the color to a beautiful green and to make it less tough to the bite. Also, this will serve many more than 10 people. I served it as a side to 20 people and still had lots left. However, it keeps well and we still enjoyed it later.

Noreen's Chicken Noodle Soup

One of the things that makes this recipe special is thickening the broth. It makes a nice consistency, and the soup is so thick, it's more like a stew than a soup.

Golden Sweet Cornbread

This is an absolutely outstanding recipe. It makes 12 muffins perfectly, and this is a nice easy way to serve them to guests. I agree with a former person that they are great with butter and honey. I am serving them this evening with a soup and salad for a nice comfort meal.
