Potato Pancakes I

I subbed sweet potatoes and used half the amount of onion. I really enjoyed the flavor, however the chunky texture of the yellow onion didn't seem right. In the future I will replace the yellow onion with minced green onion. Still a delicious recipe

Sweet Potato Pineapple Casserole

Jay's Jerk Chicken

I marinated this all day and the trick is to make little cuts all over the chicken so it soaks it all up. I'd never had jerk chicken before- but I know this one is amazing!!

Greek Lamb Kabobs with Yogurt-Mint Salsa Verde

This recipe is amazing! I marinated it for only a half hour and it came out melt-in-your-mouth tender! I served it with saffron rice- delish!

Indian Saffron Rice

This rice was fabulous! I paired it with the Greek Lamb Kabobs and it was a hit. The trick is to cook it in a rice cooker.

Baked Dijon Salmon

The right type of salmon is key!! i have tried this one twice. Both times I made twice the mustard sauce, but each time with different types of salmon. HUGE difference-stick to fresh king salmon.
