Chicken Pot Pie VIII

Reviewed: Aug. 18, 2008
This turned out really well! I didn't have time to make the crusts, so I used frozen. And I only had one, so instead I thinly sliced potatos and put those on top of the pie. It turned out really well. I added celery seed and dried thyme to the filling which gave it a little more flavor. I also didn't use mushrooms, and used peas instead just by adding them to the filling. Next time I will cook the celery and carrot with the onion in the butter for a few minutes - my carrots were not all the way soft. Thank you for the recipe! delish!

Roast Chicken with Rosemary

Reviewed: Aug. 14, 2008
Delicious, tender, juicy. Perfect! I'm not very good at cooking chicken, it usually turns out dry. But this was perfect. Its nice to slow cook it on a day off, its well worth it. I served it with mashed potatoes, green beans and gravy! yum!

Loved this recipe! My hubby really enjoyed it also. I thought we'd have lots of leftovers that I'd need to freeze, but we ate it up in about three days for lunch. Really great!!

Artichoke Spinach Dip

Reviewed: Jul. 5, 2008
i took this to a bbq potluck and everyone loved it. i took the advice of the other reviewers and added some garlic (only one clove) to the butter while its melting. I didn't have that much sour cream on hand, so i used what i had which was about 5oz or less. I also used a parm/asiago blend which gave it some good flavor. I served it warm with french bread. its better warm for sure. yum!

Florentine Stuffed Chicken

Reviewed: Mar. 20, 2008
Great recipe! Really quick and surprisingly easy. I added one clove chopped garlic and some freshly ground black pepper to the spinach mix (because we like garlic so much!). But it would be good without the garlic. I didn't have any Mozz so I didn't add that to the top, and it was still REALLY good! I'm sure it would be even better with the mozz. My husband loved it and ate it all up. It's great for lunches the next day also. Thank you!

Parmesan Chicken

Reviewed: Feb. 10, 2008
great dish! i followed the recipe exactly but i finished it off in the oven. so after i cooked the chicken on both sides so it was crispy, i poured marinara sauce into a baking dish and put the chicken on top, and baked for about 20 minutes at 375. the chicken was wonderfully crisp on the outside and moist on the inside.i also added carlic, tyme and garlic powder to the bread crumbs. i served over steamed spinach. my husband even had seconds!!! i'll be making this again.

Great recipe. I added some garlic powder and thyme to the sauce...and also some parmesean and provolone cheeses. the mustard gives it a good flavor. i also decided to add chopped cooked chicken breast to the pan before baking for a one dish meal. turned out great, i might make more sauce next time. thanks!

French Onion Soup V

Reviewed: Jan. 20, 2008
this is a great recipe! i did carmelize my onions for a lot longer than the suggested 10 minutes. i cooked mine in the butter on low heat for around 45 minutes stirring occassionally. i also put a TBLS of beef broth in towards the end because the pan was dry. i did not use water, instead just all beef broth. i added garlic powder. a little extra wine. be careful with the sugar if your onions are already sweet, they might not need sugar at all. my soup was too sweet so i had to add a little more wine, the garlic, and the salt to even it out.

Turkey Tetrazzini II

Reviewed: Nov. 25, 2007
This is a great recipe, but I made a few modifications like some of the other reviewers. First off, there is not enough sauce for this amount of noodles, so i would cut the noodles in half, only use half the package instead of the whole thing. I added some garlic powder, chili flakes, dried thyme, sald and pepper to the sauce. I even needed to add more salt after it was baked. Oh and I also peas to the sauce. (Frozen peas)I sprinkled bread crumbs on the top before baking like another person recommended, and only baked for 30 minutes. Next time I will saute some onions and garlic with the butter, and maybe add mushrooms. This is a great recipe! Its nice because you can add what you like.

Ricotta Fettuccine Alfredo with Broccoli

Reviewed: Jul. 7, 2007
really good and quick recipe. since i didn't have any cream in the house, i was so happy to find this recipe, and i had all the ingredients in my fridge. Instead of broccoli, i blanched some sweet snap peas and added those, along with some baked chicken. I would recommend serving this dish immediately after adding the noodles to the sauce, or else it gets too thick and the noodles stick together.
