After-Thanksgiving Turkey Soup

Roasted Butternut Squash Soup with Apples and Bacon

Yum. This was really tasty. But it wasn't the easiest thing to make! I prepped the day before making by cutting up all of my veggies/bacon/apples and roasting the squash and it still took a long time to make the next day. Made a ton though and we enjoyed it for days. Used apple juice instead of apple cider because that is what I had on hand. Garnished with extra crumbled bacon.

Stuffed Green Peppers I

Easy and delicious! Used 2 HUGE green peppers, 1 lb of extra lean ground beef and 2 cups of cooked brown rice. Added some seasoning salt to the beef, and chopped up the tops of the peppers and added them to the beef/onion mixture. One can of tomato soup and one can of water mixed, added what wouldn't fit in the peppers to the sauce in the pan. Perfect.

Honey Roasted Red Potatoes

Very tasty. I enjoyed the addition of some cayenne pepper from another reviewer. Also drizzled extra honey all over half-way through the cooking time.

Apple Dumplings II

Oh man. These were yummy. Used 1 & 1/2 times the dough, and cut 4 large apples in half to make 8 dumplings. Omitted the food coloring. These were oh so good!

Roquefort Pear Salad

Slow Cooker Chicken Taco Soup

This was really tasty. Made it exactly as written, except my cook time went 7 hours straight through, then I shredded the chicken. Topped with some reduced-fat cheddar cheese and fat-free sour cream... only 6 WW points and super good.

These are great, albeit a pain in the arse to make. I usually use 4-5 cups of confectioners sugar, 2 cups of peanut butter, and add a little bit of paraffin wax to my chocolate to make it shiny. I usually make these at Christmastime only, but my best friend is getting married this weekend... and the bride gets what the bride wants!! :)

Grilled Marinated Shrimp

Yum. Yum yum yum yum yum. Used a less oil, probably only about a 1/4 cup and marinated for under an hour. Thread the shrimp through the tail and head, that way they stay put when you turn them. 5 minutes on each side on the grill was perfection. YUM!!

S'mores Crumb Bars

I put the original amount of graham cracker mixture on the bottom, and then made another cup and a half to put on the top. Needed about 5 more minutes in the oven to melt the chips and mallows properly. Refrigerated overnight and cut them into bite size bars this morning. Yummy!! Definitely took care of my s'mores craving.
