Spinach-Stuffed Salmon Fillets

I was "hired" by my roomie to make this for his date, and until now didn't actually find the real recipe! I've fast tracked it and made this for several years with interestingly the same additions, as I see in the comments! Parmesan instead of feta if I lack the latter, a little lemon in the spinach, and forget slitting the salmon I say! I have a reliable marinade consisting of shallots/onions sauteed in butter, add white wine, dashes of tabasco, lemon, garlic, fresh ginger, s & p, tarragon, ... You're foodies! I'm sure you can figure out the proportions! I usually wing it depending on what I have. Boil it all, let it cool, marinate the fillets, and they will only take about 5 minutes to poach in the same marinade, as the lemon will have helped the process. I leave the skin in the pan and lay the fillet on top of the spinach and it's beautiful. Thank you for this great recipe!

Strawberry Spinach Salad II

The best I've had with compliments galore! Definately half the sugar and it's still plenty sweet. I always add toasted slivered almonds, and instead of onions in the dressing, I either throw shallots or red onion into the salad. Depending on what I have around, I've also added feta or goat cheese, sliced kiwi, mandarin oranges, toasted pine nuts...the basic recipe is very good, and that's just the beginning!

Absolute Mexican Cornbread

I've made this umpteen times according to the recipe (always real butter in my life) and always for a crowd. Everyone loves it, and I have referred them all to this site for the recipe. I don't know what people have done wrong to rate it poorly, as it's the best cornbread EVER... I even forgot to put in the baking powder once, it turned out okay but a lot more buttery, and people still raved about it! As a matter of fact...I had the most compliments on it at that particular party...so lots of us don't think there's too much butter!
