This is quite yummy, but tasted better before I added the milk (I used whole milk instead of cream, because I had it on hand). I sauteed a bunch of frozen onions and leeks in butter (I had bacon pre-cooked from breakfast, so no grease, and I just used the amount of leeks/onions that looked right, since they were frozen and pre-sliced) and then boiled diced uncooked potatoes (2 small, 3 med., about 7 min) in the leeks/ onions/ broth and then blended it in the pot with a hand blender. I added some fresh ground pepper and it was wonderfully creamy and thick, but when I added the milk it diluted the flavour (even cream would have diluted it, and it couldn't have made it any thicker than it already was). Next time, I'll skip the dairy, but I'll definitely use the recipe again! So many other recipes had more ingredients, but I love the flavour of leeks, and this definitely has an amazing taste. And even without the bacon (I threw that in at the end), it would be amazing. Thanks!!
