Tartar Sauce II

Best tartar suace I've ever had. This one is better than Frische's. Thier's is so good, I make a special trip to order their $5 fish sandwich...all because of the tartar. This is Better! Excellent taste. This tartar sauce has a nice balance of spices and mayo that packs a real punch! This is great because you can use a smaller portion of this unhealthy condiment and not feel like you are getting cheated!

Barbecue Ribs

I made these ribs and then shredded the pork to make pulled pork sandwitches. Awesome. Carefull to get rid of bones, fat, and cartilage. Cole loved them. Every bit as good as City BBQ but takes some time!

Asian Lettuce Wraps

Awesome! Almost as good as PF Changs. Takes a lot of time to prepare. Use green leaf lettuce rather than iceberg.

Shredded Chicken Tacos

Awesome! I added spicy red peppers to kick it up a notch. Also, Cole likes these with deep fried corn tortillas. But the chicken is good in soft tacos and on nachos too!

Chicken Fried Chicken

My son is a picky eater. He really liked this one. Must do: Dredge in flour, then egg, then Saltines,potato flakes, spices mixture. Spices added: garlic, paprica, parsley, pepper, and seasoning salt such as Chachere's -- 1TBSP each When pan fried with ~ 1/2 cup of oil the breading stayed on and the chicken turned out perfect.

Cinnamon and Lime Chicken Fajitas

I cut one potato into small cubes and baked in pan sprayed with pam. Added salt and pepper and cooked for about 45 min. I grilled 2 chicken breasts on the BBQ. I removed the chicken from the grill, added garlic powder and cinnamon. Set aside. Then I sauted red onion, yellow bell pepper and garlic in oil in a wok. Added chicken, fresh cut mushrooms, cayenne pepper, 3 tbs of red taco sauce, a handfull of pickeled jalapenos (not as hot as fresh but flavorful), and 4 diced pickled red peppers. Add the chicken and lime juice and sautee for about 1-2 more minutes. Garnished with sour cream, spinach, tomatoes, and cheese. Plenty of flavor. This meal was all natural with no preservatives... (except the tortillas which I use low calorie "FLat-Out" wraps that are only 90 cal/9 gm of fiber, & 9 gm protien

Crab Crusted Grouper

The presentation was beautiful. Taste was good but to make this recipe a 4-5 star you have to broil the fish for about 4 min once the fish is cooked and flakes with a fork. Here's why...the dish is a bit mushy and if you broil, it gives the dish a final texture that really completes the meal.

Cashew Rice Pilaf

I cheated and you can too! I melted butter in a 5 quart pot. Added onion, cashews, and finely chopped carrots. Sauteed for ~2 min on high heat. Add the remaining ingredients. I used two boxes of uncle bens long grain and wild rice and cooked for about 25 min - Until the rice absorbed the chicken broth. Everyone liked it so it was a hit.

BBQ Pork for Sandwiches

I used Pork Spare Ribs. Doubled the beef broth in the croc pot to ensure the ribs get tender and cooked for 5 hours on high heat. I found that it was easier to let the ribs cool a bit and then use my fingers to separate the meat from the bones and fat. I used Sweet Baby Rays (sweet and spicy) BBQ sauce. Served on buttered and toasted buns. Very tasty but no better than City BBQ's pulled pork. Great satisfaction from making my own pulled pork but for the amount of time it took plus the cost of ingredients, I may just buy it from City BBQ by the pound ($11/lb). 1 rack of fibs + Sauce + broth means I saved about $10 over purchasing the same amount from the restuarant. When I make it next time I'll make a homemade BBQ sauce...I think it would have made all the difference! Also, to save money, use the leftover beef broth as the base for beef stew for the next evening!

Cornbread Pudding

Followed the recipe then added the recommended ingredients. I added two eggs and 1 stick of butter. Still, my wife thought the recipe was a bit bland. Then I realized I left out the salt and pepper. Definately will add that next time. Also, next time I'll use only a 1/2 stick of butter and add a kick...maybe cayenne pepper or green chilies.

Best Marinara Sauce Yet

Balsamic Roasted Red Potatoes

I wasn't crazy about this. The balsamic made the potatoes a bit mushy and I was hoping for a bit more crisp. My 12yo boy didn't like the bite of the balsamic either.
