Asparagus, Chicken and Penne Pasta

It didn't taste bad...there was just nothing very good about it. The dish was plain and seemed like the kind of thing that I could come up with by throwing together a few random ingredients laying around my house. Not a meal worth planning.

Slow Cook Thai Chicken

I'm still deciding if I liked this sauce or not. I served it over thin noodles which was nice. I also followed suggestions by adding the pepper and onion later and they were not too mushy. It did not have any overpowering flavors and wasn't bad but I doubt I'll ever end up making it again.

Chicken Enchiladas I

I thought this would be better based on the ratings. I did not add water as suggested and used less tomato sauce but I just felt like this was lacking in flavor. It was fine but not great.

Spinach Stuffed Chicken Breasts

Easy and tasty. I added a sauce of olive oil, lemon juice, garlic and oregano per a revewier's suggestion. Also, I cooked it for 20 minutes, sliced each breast in 1 inch segments and put back in the oven for 10 minutes. This helped to make it more presentable. And I didn't use bacon because we were out but I think that would add to the flavor.

Grilled Eggplant, Tomato and Goat Cheese

I did this in the toaster oven on broil and used cream cheese mixed with feta because I didn't have goat cheese. I think I was able to achieve the same overall taste with those adaptations. It had a good taste but nothing that popped. Perhaps herbs mixed with the cheese would make it even better.

Pear Pie III

I loved this pie! We needed to get rid of some overripe pears and only had 1 egg left but it was still great. I have more pears left so I might make another one tonight.

Light and Fluffy Spinach Quiche

A great quiche. I overslept and was able to whip it up in 10 minutes! I used an extra egg and the filling was overflowing out of the pie crust. My reason for giving 4 stars is that is wasn't as fluffy as the some of the quiche I've had at restaurants.

Tomato and Avocado Salad

I thought this would be great because I love avocados and had some delicious heirloom tomatoes from our garden. Unfortunately it was just so-so. I think the dish needed something with a different texture to balance the soft items.
