Maple Salmon

This is a great salmon recipe! The only thing I did to it was to double the sauce. That made plenty and it was soooo good with potatoes. I love simple and great tasting recipes. I have another salmon recipe I love and now I think I'll flip flop between the two!

Chicken Piccata II

I made a few of the revisions others suggested and this turned out great. All the leftovers were eaten! I used a combo of chicken broth and white wine in place of the bouillon. Increased the amount of flour mixture and dipped the chicken in the flour mix, then egg mix, then flour mix again. I thought it created a nice coating this way. Also doubled the sauce recipe and added 1 tsp. of sugar as other suggested then put a little basil and oregano because I like the seasonings so well. I think cornstarch and water mixed in with the sauce it a must to get it to thicken a little. As suggested I kept the chicken in the oven while making the sauce because I didn't want it to get soggy. It turned out just fine this way. I will make this dish often! Thanks!

Chicken With Mushrooms

I made this pretty close to the original recipe. I did add some white wine in place of the chicken broth because we like wine flavored dishes. I just couldn't get the sauce to come out right. It was very thin, so I tried to thicken it but it just didn't do much good. My husband liked it ok, but I didn't care for it. I think I will try it again, but add some cream of mushroom like LOTS of others have suggested.

Honey Walnut Shrimp

This turned out really well. I couldn't find the flour it was calling for so I made a substitution. Some here recommended regular flour and some corn starch. I used half of each (and a tablespoon of lemon juice). It turned out great this way. I didn't have any problems with the batter staying on the shrimp and it still turned out light and fluffy. I also put the sauce, shrimp and walnuts in a pan to warm it before serving. Husband said it was better than what we get at a restaurant!

Spicy Bean Salsa

My husband and I loved this! It was healthy and tasted great. I took the suggestions of previous reviewers and left out the Italian Dressing. Instead I created a dressing using 1/4 c. fresh lime juice, 2 Tbsp. olive oil, salt and pepper. I thought it was awesome and reduced the fat greatly. And since I love avocados so much I chopped one up and added it in at the end so it would retain its shape.

Mediterranean Summer Tomatoes

This recipe turned out great! I didn't have the shallots, so I just left them out and made it with the tomatoes. I also added a little chopped fresh basil to the mix. My husband loved it and even took the leftovers to work the next day to let his 2 coworkers try them. They loved it as well!

Bud's Potato Salad

This turned out great! I got TONS of rave reviews. I added boiled eggs, sweet pickles, a little less mayo and some mustard (cause that's just how you make it in my area). I will make my potato this way ALL the time now!

A Marinade To Die For

The steak was fairly tender, but not very tasty. We have used SEVERAL other marinades that have had more flavor. Perhaps it would be better if I let it marinade for 2 days?
