Spicy Garlic Lime Chicken

Great! I added cumin, and I didn't have thyme. I threw in some onions while the chicken was sauteing, and some black beans right at the end. Served it with pasta, as I'm all out of rice. Fast, easy and tasty. (Would probably be good with some avocado chunks in there too...)

Black Bean And Corn Salad II

Made this for a picnic, and it seemed to be well-received. I did add some cumin, and used the amounts more as guidelines, but I really enjoyed this. It was good as a burrito filling too.

Creamy Lemon Pie

I made this for Easter dessert, and it was very well-received. I piped whipped cream on the top, and there are only a couple of pieces left! My husband thinks it could have a stronger lemon flavor though - maybe I'll add more juice next time. It was super easy though - I made it Saturday morning and then we ate it Sunday afternoon.

Cinnamon Rolls I

Oh wow, these are good. I've made them twice so far, and they turned out better when I used the KitchenAid to mix/knead the dough and when I made the dough the night before. I frost them with cream cheese frosting, and they disappear in no time flat!!

Slow Cooker Chicken Stroganoff

I tried this one when I was looking for a new way to do chicken in the crockpot. I did add some onion and a small splash of chicken broth to the crockpot before I left, since I was going to be gone longer than the six hours. Served it over elbow macaroni and broccoli; my husband said he'd give it "a six out of five!"

Zucchini Brownies

Overall, I was pleasantly surprised by this recipe. I'm not a huge fan of zucchini, and my husband loves zucchini bars/bread. He suggested that I make a zucchini bar to use up our zucchini. I like this as a brownie, but he only thinks it's a 3 as a zucchini bar, because you can't taste the zucchini. Of course, that's why I liked it! I followed the recipe, excepted substituting chocolate chips for the nuts.

Chicken Breasts with Balsamic Vinegar and Garlic

This was pretty tasty - I served with carrots and shell pasta. Next time, I'll make more sauce to have over the pasta and the chicken. I also used onions instead of mushrooms (we don't like them).

Baked Potato Soup

I made this recipe for our Super Bowl party, and it was a huge hit! It seemed to be a little bit more work than I had expected, but it was well worth it! We served it with sour cream, shredded cheese and the crumbled bacon - just like a loaded baked potato!

Juicy Pork Chops

I've made this recipe twice, and my husband has LOVED it both times. He says he'd give it 10 stars - and that's coming from someone who's not a pork chop person. As far as he's concerned, it's the only way for me to make them! It seems to work well with both boneless and bone-in chops, and I've marinated it for anywhere from 3 to 5 hours with great results. I also use lite/reduced sodium soy sauce for it, fresh crushed garlic and freshly ground pepper. Per one of the other reviews, I threw in a dash of ground ginger as well.

Southern Butter Rolls

These were my first attempt at baking with yeast. I followed a friend's advice and mixed the yeast and water together first, rather than putting it in the flour, etc. These turned out a little dense, which might be my fault, since I'm inexperienced with bread. And, because I had a blond moment and read two "tablespoons" rather than teaspoons for the salt, they were really salty. But that's my fault, not the recipe. I'm sure they'd taste better with someone else making them. :)

Quick Cherry Turnovers

These tasted good, but I thought the ratio of cherry filling to dough was a little off. That may be my fault though, as I decided not to push the triangles together into squares. As a result, they didn't roll too well, and some of the filling oozed out. Oops!

Seven Layer Taco Dip

Very tasty, pretty easy too. I didn't use olives (I'm not a fan), and I was afraid that I wouldn't have enough beans to cover the bottom of a 9x13 pan. As a result, I used a 7x11 pan, and I ended up having about 1/2 cup of leftover cream cheese/sour cream mixture. I'll make this again; it was a hit at the Christmas party!

Bruschetta Chicken Bake

This is really good - with a couple minor changes. I omit the salt and use 2 cloves of garlic, rather than a teaspoon. I also brown the chicken prior to putting it in the 9x13 and only use 1 cup of cheese. Oh, and I don't bother to grease the pan - it doesn't seem to stick in my glass dish. This looks fancy enough for company and is SUPER easy. My husband (who can't stand tomatoes, except in ketchup and spaghetti sauce) raved about it and said I need to add it to my regular rotation.

Apple Chicken Stew

I'm giving this a a four, because I thought it was just OK, but my husband LOVED it. I didn't use the crockpot; I made it on the stove instead... which might be why I wasn't crazy about it. I thought it was too dry (not stew-y enough).

Hot Cocoa Mix

This is OK... I really sifted/stirred to make sure there weren't big chunks of powdered milk. But, overall, the taste isn't bad (my husband will probably want it sweeter), although nothing amazing!

Garlic Cheese Quick Bread

This is super easy to make - and the flavor's not bad (but it's not stupendous either!). It's best when paired with a soup so you can dunk the slices. I liked how it got nice and crusty. The next time I make it, I think I'll add more garlic and sprinkle some grated parm. cheese on top before it bakes.

Broccoli Cheese Soup III

"Yum-o!" - that's what my husband said about the soup... I guess I'll be making it again! I threw in chopped onions, pepper and garlic powder as well. And, I used 3/4 milk and 1/4 cream to make it thicker and richer. And, I went heavy on the cheese... probably used 1 1/2 cups (for 1/2 a batch).

Grilled Chicken with Herbs

I was SO excited to try this after making the marinate - it smelled great! But, I thought it just tasted OK. And my husband (who'd rather eat things plain) wasn't crazy about it. Maybe my expectations were too high after smelling the marinate all afternoon! The chicken was nice and tender though. Not sure if I'll try this again... especially because I'm not sure what I'd change to improve it!

Apple Streusel Muffins

These were pretty good - although, I think they need more than just cinnamon and apples (raisins? nutmeg?). My husband's been gobbling them up though, so I can't complain! I used a large cookie dough scoop to put the dough in the muffin cups - it worked great! No spills/overflow, and it left room for the streusel. I got 22 muffins out of this batch.
