Sour Cream Mushroom Chicken

Followed the recipe except for using fat free sour cream and one can low sodium soup--so easy to make, nice flavor, and my husband raved about it!! With regard to the abundance of sauce, I removed the chicken from the sauce when done, and dumped in some almost-cooked pasta, and it soaked that sauce right up to make a yummy accompaniment to the chicken. If I don't make this again I'll be in trouble!

Chocolate Chip Pumpkin Bread

Nice and easy recipe! I got 64 mini muffins and two 3-inch square loaves out of one batch. I subbed applesauce for 3/4 of the oil, with no loss of flavor or moisty goodness. Increased the walnuts and chocolate chips by a bit, to suit my tastes. This one's a keeper!

Curried Red Snapper

Surprisingly good--this recipe would likely appeal to even those who aren't wild about fish. I also took the previous suggestions and added flour to the onions, then a cup of milk, a little basil, and just a little lemon. Poured it over tilapia filets, baked at 375 for 20 minutes, and it was great! I can't imagine using cream as the milk and flour seemed rich enough (from a California perspective, that is).

Five stars for simplicity and tastiness! Do not soften the butter or the batter becomes sticky; it's so much easier to work with when the butter is cold (or the batter is chilled). My batch yielded 4 1/2 dozen, even with judicious use of a 1 inch melon baller. Blackberry jam rocks, as does raspberry. I also found that making the indentation at the same time as rolling it into a ball eliminates any cracking in the round sides. I used my index finger--again, easy.

Suki's Spinach and Feta Pasta

Simple and delicious, good combination of ingredients! I added chicken with the onions, amd because I was low on feta I added a few tablespoons of cream cheese to the liquid to make it a little creamy. Perhaps a bit fewer tomatoes, and more spinach as suggested. It just goes to show what a flexible recipe it is! Thanks!

Orange Balls II

This is my great aunt Eleanor's recipe to the letter! (Although back then it was just 'one box' of wafers, 'one box' of sugar). It's so easy and tastes so yummy! I've also tried rolling them in chocolate sprinkles as well, also good.

Shrimp with Penne and Squash

I was surprised by how good this was--the flavors are subtle yet interesting. Hubby liked it even though it didn't have a heavy sauce. Of course, I couldn't just make it as written. Per others, I added an onion (actually started with sauteeing the onion), a nice addition. I stacked the deck by using a lemon-infused olive oil, and I only had zucchini on hand. Loved it! It's on my replay list.

Broccoli Soup

Quick and easy, and I found the immersion blender worked really well in the pot for getting a 'mostly pureed' texture. The potatoes really give you control over how thick you'd like the soup to be. I'll do it again!

Spiced Butternut Squash Soup

Like other posters, I suggest you start with less chicken broth because you can always add more to dilute it. Also, it's amazing how potent 1/8 tsp of cayenne is, so be careful! Seemed a little bland for my taste, so in the future I'd use apples rather than or in addition to potatoes, as the squash needs to sugar for the flavor to come out. I added more garlic to enhance the flavor as well.

Nutty Chicken Fettuccine

REally interesting flavor--I'd make this again. The sauce was a little too heavy and creamy for my tastes (I'm from California, we don't use creamy sauces here!), so I didn't use it all and also thinned it out with extra milk. I also put in extra cheese, and it still was barely detectable. Loved the aroma and the taste otherwise, and it was easy to prepare! Hubby loved it.

Date Bars I

I've made these twice, with the recommendations posted by Shooga. The second time I didn't have orange juice, and I have to say I like the filling much better with the oj/lemon juice added--it has more flavor. I used quick oats with good effect. And if you forget to press the top crumb layer into the filling, you can do it halfway through cooking.

Simple Beef Stroganoff

A little on the bland side but simple and quick to make, and a respectable weeknight meal. I added chopped onions and sliced mushrooms to the meat to give it a little more flavor.
