After reading the reviews, this recipe was modified quite a bit from the original. I used 1/2 cup vegetable oil, 1/2 cup applesauce, 1 tsp vanilla extract (use the real thing, please), 1 cup white sugar, 3/4 cup packed brown sugar, 3 cups zucchini (left in a sieve to drain), and a bag of defrosted blueberries. Baked in two regular sized loaf pans. Topped them with a crumb topping made up of 1/3 cup packed brown sugar, 2 tbsp flour, 1/4 tsp cinnamon, and 1 tbsp butter. Baked both pans at 350 for 1 hr. Even after reducing the sugar and adding the crumb topping, it was still sweet so do not put in 2 1/4 cups sugar. This bread is very moist and delicious.
