Broccoli Casserole

This turned out just like I wanted. I did make a few changes, but don't we all! I used the 98% fat free cream of chicken instead of mushroom due to personal preference, but other things I did made this side dish 13g of fat/serving instead of the 40g that the recipe results in. I used 3/4 c. light mayo (if you only make one change, make it this one!), 3/4 c. 2% milk Cheddar cheese, reduced fat crackers, 1 T olive oil for the onions, and sprayed the top of the casserole with Pam instead of using butter. Came out tasting just like my grandmother's, and I know she doesn't use low-fat anything!

Garlic Mashed Potatoes

Yum! I took someone's advice and boiled the cloves whole with the potatoes. It made them nice and soft so that I could just beat everything with the electric mixer at the same time. I also added a little bit of garlic salt as I was mixing and I omitted the sesame seeds.

Oatmeal Waffles

Will probably use more cinnamon next time. Added a fair splash of vanilla and followed someone else's suggestion to soak the (old-fashioned) oats in the milk while prepping all the other ingredients. Used vanilla soymilk and Ener-G egg replacer (egg allergy), replaced half the butter (Smart Balance) with applesauce, and used .5 cup white wheat flour and 1 cup white all-purpose. Whipped the "eggs" and folded them in at the end--kept the waffles from being too dense. Think this might have become our new favorite waffle recipe!

Banana Banana Bread

Delicious! Used Ener-G Egg Replacer and Earth Balance to make it vegan and then just added a teaspoon each of cinnamon and vanilla extract. Couldn't tell the difference between "regular" banana bread and this. Made 24 mini-muffins and 12 regular muffins that all cooked in less than 25 minutes.

Good Old Fashioned Pancakes

This recipe turned out great! I'm adapting recipes for my partner, who is allergic to eggs, so we used the ENRG Egg Replacer, rice milk, and Earth Balance. They were vegan and I could not tell a difference (I'm somewhat of a pancake/waffle snob)! Only other difference was that I added a splash of vanilla extract.

Restaurant-Style Zuppa Toscana

Increased the recipe slightly to make up for the larger can of chicken broth I had by adding 5 and a half russet potatoes. Also added a sprinkling of crushed red pepper, which gave it the necessary spice level. Very yum.

Sweet Potato Casserole II

Everyone raved over this at Thanksgiving dinner. My grandmother is diabetic, and many of us are trying to watch what we eat, so I subbed margarine for butter, egg beaters for eggs, splenda for sugar, and the Splenda brown sugar blend for the regular brown sugar. It still turned out great.

Lentil Soup
