Cha Cha's White Chicken Chili

Yum. I added: an extra can of white beans, mashed. This does wonders for the texture. Also added a few tablespoons of chopped fresh cilantro, 1 tsp of chili powder, 1/4 cup chopped green onion, & 2 bay leaves. Served with avocado slices on top. This recipe is perfect for South Beach Dieters, all phases.

Carol's Arroz Con Pollo

Excellent! Even better the next day. I added cumin, a diced habanero, a dash of cayenne. Also I used brown rice & it worked fine. At the end I added half a can of petite peas.

Banana Bread

I added 1 tsp of vanilla, and I made 9 mini-loaves instead of 2 big ones. This recipe is great because you can get rid of overripe bananas using ingredients that you probably already have on hand! Thanks for the recipe!

Curry Chicken Salad

This was really good, with some modifications. I added chopped green onion, chopped almonds and a bit of splenda to add sweetness. Delicious! I will definitely make it again.

Chicken Provolone

I gave this recipe 5 stars, but I made some changes because I used what I had on hand. After cutting the recipe in half, I substituted Cream of Broccoli soup, added some minced garlic, and substituted swiss cheese. To cut down the wine I used 1/2 cup wine and 1/2 cup lowfat milk. Lastly, I added 1 cup of water to the stuffing so that it would be moist. I cooked it for 30 minutes covered, removed the cover and cooked an additional 15-20 minutes. It really was a tasty dish, and I will make it again.

Actually Delicious Turkey Burgers

I add a generous sprinkle of McCormick's Montreal Steak Seasoning on top of the patties, and they are perfect. Works well for turkey or beef. Also, I used Egg Beaters, and could not tell the difference.

Awesome Steak Marinade

This was fantastic. The only thing that I recommend is to scale it depending on how much you need. I had just over a pound of meat (3 filets), and half of this recipe would have been plenty. Also, I marinated for 24 hours, I would probably do it for less time so it wouldn't be so powerful.

Scalloped Potatoes I

I used 1 and a half large baked potatoes, skin on, but used the same amount of the other ingredients and it came out perfect. I baked it for 30 minutes covered, and 30 minutes with the cover off.

Bacon Spinach Salad

This was wonderful! I omitted the onion and mushrooms due to personal preferance, and added thinly sliced red bell pepper and crumbled blue cheese. The blue cheese melded very well with the dressing. Also, I chose to use the Catalina "Light Done Right" dressing, as well as turkey bacon to save on fat and calories, and could not tell a difference. Excellent!

White Cheese Chicken Lasagna

This was wonderful. I made the following modifications: made 1/3 more sauce. Used only 1 package of spinach, which I mixed into the ricotta. I layered in the following way: 1/4 sauce, 3 noodles, 1/2 ricotta/spinach, 1/2 chicken, 1/4 of sauce, 1/3 of remaining mozz/parm, 3 noodles, rest of ricotta/spinach, rest of chicken, 1/4 of sauce, 1/3 of remaining mozz/parm, 3 noodles, rest of sauce, rest of mozz/parm, sprinkled with fresh parsley.

King Ranch Chicken Casserole III

I prefer to leave out the broth, use 3 cups of cheddar, and add about 1/4 cup coursely chopped cilantro, and 1 large chopped fresh jalapeno. Delicious!
