Chicken with Rice and Gravy

Reviewed: Nov. 1, 2009
I tripled this recipe..also added garlic powder and onion powder. And as per others, used chicken broth instead of water. and poultry seasoning... it was very good. My husband still felt it wasnt spicy enough and added hot sauce...but we almost always had hot sauce to all we eat. I felt it was spicy enough with out the hot sauce. However it would have been bland as written.Im very glad I added more seasonings. This was my first time serving gravy with rice instead of potatoes. It was different, but nice.

Camp David Spaghetti with Italian Sausage

Reviewed: Oct. 27, 2010
My family LOVED this..I too browned the sausage with the ground beef.I also added an extra can of crushed tomatoes because my family likes a sauce-y meat sauce. I will make it this way from now on!

Lemon Chicken Piccata

Reviewed: Jan. 1, 2011
This was really good. I didn't have fresh lemons, so I only used the 1/4 cup juice from a bottle..I also added about 1/4 cup white wine that I wanted to use up. We really enjoyed this Piccata.Very much like what is served in restaurants.

Spanish Potato Omelet

Reviewed: Nov. 24, 2010
yummmm! my italian grandmother used to make me this as a kid....it brought back such good, cozy, memories.I really think the tip about mixing the cooked potatoes with the beaten eggs then pouring it all back into the fry pan , was a great help with it setting up evenly.

Tuna Noodle Casserole I

Reviewed: Nov. 14, 2010
I am rating this as a 'base' recipe.I adjusted alot due to taste preferences..used cubed cooked chicken and steamed broccoli and sauteed mushrooms...followed sauce but doubled it except the cheese...also added ALOT of seasoning to the mixture..garlic and onion powder, turmeric and a touch of nutmeg..YUM! Will definitely make this recipe with my adjustments. THANKS for a great base!!!

Puerto Rican Shepherd Pie (Pastelon)

Reviewed: Oct. 20, 2010
very authentic taste!!! My family couldn't get enough.I only had 4 ripe (almost black) plantain, and 3 eggs and no green beans but the rest of the measurements were the same. Also, just out of habit when making puerto rican beef recipes, I added about 1/2 cup tomato sauce to meat mixture and simmered on low for 30 minutes before layering. I honestly cant see me making this as written with 8 eggs..the 3 were enough for us.thanks for a great comforting dinner!

Jalapeno Popper Chicken

Reviewed: Aug. 23, 2011
This was yummy. I pounded the chicken breasts real thin then filled and rolled them, held it all together with toothpicks. I did not fry,but sprayed with oil and baked. The only thing was the leftovers the next day weren't good. Not sure why,but the first night straight out of the oven was great. I made this along with Mexican sour cream rice from this site.

Mexican Sour Cream Rice

Reviewed: Aug. 23, 2011
I loved, loved, loved this rice! I subbed a can of black beans for the corn, we don't like corn with rice. The flavor was wonderful , cilantro is a must. It was a little dry,not cheesy saucy .....but we still devoured it!

Asian Fire Meat

Reviewed: Oct. 20, 2010
WOW!wow!WOW! Soooooooooooooooo good! Followed recipe, except added an assorted mix of chopped fresh "asian" veggies that I found in my store's produce section. About 1 pound worth of mixed bok choy, red onion, carrots and something else that I couldn't quite tell what it was.(instead of the stated 2 leeks, and 1 small carrot) LOL This dish is HOT, just like the title!!! Im glad I had the extra veggies to disperse the heat. Served with white rice and store bought egg rolls.

It's Chili by George!!

Reviewed: Sep. 7, 2011
Omg!!! Thank you! I have been trying to find a great chili recipe forever. The search is over. I halved this recipe , only kept the green pepper the same. I always disliked soupy chili, so A BIG thanks to all those who suggested adding tomato paste, the texture, taste and appearance of this chili is just perfection.
