Puerto Rican Shepherd Pie (Pastelon)

very authentic taste!!! My family couldn't get enough.I only had 4 ripe (almost black) plantain, and 3 eggs and no green beans but the rest of the measurements were the same. Also, just out of habit when making puerto rican beef recipes, I added about 1/2 cup tomato sauce to meat mixture and simmered on low for 30 minutes before layering. I honestly cant see me making this as written with 8 eggs..the 3 were enough for us.thanks for a great comforting dinner!

I have made this twice in the last month. DELISH!!!! I used marinated artichokes, undrained ( for more sauce) and have added sundried tomatoes,chopped up...fabulous dish!!!

Take Out-Fake Out Mexican Rice

This was such a nice ,lightly flavored side to my enchiladas. I forgot to add the chopped fresh cilantro to the enchilada mixture(about 1 tbls), so I threw it in the rice, YUM! With my husband, being Puerto Rican, we always have sofrito on hand in the fridge.( its a base in most PR dishes).I will most certainly make this rice again and again!

Salsa Chicken Burrito Filling

Awesome!!! I made it in the slow cooker with skinless, boneless chicken thighs.....shredded before filling tortillas... then baking.....followed recipe exactly......YUMMY!!!

The Best Red Enchilada Sauce

FANTASTIC!!!!! Made this over the weekend, for chicken enchiladas...after followind recipe exactly, I added a thin slice of onion (about 1.4 inch thick) pureed,then put into the sauce and cooked for 30 minutes. Loved it both ways.

Italian Bread Using a Bread Machine

I had high hopes for this bread after reading all the great reviews.I followed this recipe exactly....but it was not even close to a replacement for the bakery bread in NJ. Sorry...i will not be making this again.

Fudge Frosting

the taste and texture were great....thin not too sweet, VERY nice chocolate flavor. But it was way too thick. I followed recipe exactly...but had to add alot of water to get it to pour/spread over my cake.

Fresh Strawberry Scones

This was my first time making scones..YUUUMMMY! Followed recipe to a "T", except only had an orange to zest, not a lemon. My batch made 6 tennis ball size scones, not 8 as written. Will definetly make again!!!

Slow Cooker Enchiladas

Very good comfort food! Next time i will add some jalapenos, because we like our mexican with heat. Also, I only had i can of cream of mushroom, so i mixed it with a cup of sour cream, also added a can of red beans in with the taco meat. Will make again!

Buffalo Style Chicken Pizza

Yummy!!!!!!!!!!!!!!! For less then it costs for 2 slices of this at my local pizzeria I made a whole pie. I used ranch (personal preference) and fresh pizza dough from the grocery stores deli section.I rolled it out and baked it for about 7 minutes( I do this when I make traditional pizza too)then followed as written...to my surprise my family had eaten the mozzarella cheese. that i bought for this recipe..so I used a combination of shredded cheddar,Monterrey jack and provolone.definitely will make again!

Seven Layer Salad

This was a GREAT salad. I made it last night with what veggies I had on hand..no peas, added red pepper and a layer of fresh parsley, I took the advice of others an did 1/2 sour cream 1/2 mayo. The only part I wont do again is to add the sugar. I added more parmesan to cover over the sweetness..I didnt care for the sweetness. OH I also only put bacon on a half layer, being that my 18 year is a vegetarian. Over all it was very, very good.DEFINETLY will make again!

Easy Pasta Fagioli

OMG this is sooooooooooo good!. I started to follow as written, but then saw I would want it 'soupier' so i added a full 32 oz box of chicken broth to 28oz tomato sauce. mmmmmmmmm so good! I will do this( without beans and pasta) as a base for cream of tomato soup too, from now on!!! My husband just finished his bowl and said, "This is better then what we get at the italian restaurant!"

Chicken with Rice and Gravy

I tripled this recipe..also added garlic powder and onion powder. And as per others, used chicken broth instead of water. and poultry seasoning... it was very good. My husband still felt it wasnt spicy enough and added hot sauce...but we almost always had hot sauce to all we eat. I felt it was spicy enough with out the hot sauce. However it would have been bland as written.Im very glad I added more seasonings. This was my first time serving gravy with rice instead of potatoes.It was different,but nice.
