About this Cook
I love to experiment and try out new recipes all the time. I'm very grateful for a husband who is willing to try new things. I just recently had my second baby, and I'm trying to eat healthier food (in addition to exercise), not only so I can lose my baby weight, but so I can BE healthier in general. It's not such an easy thing when almost everything I like to eat is bad for me! :)
My favorite things to cook
Mexican and Italian...the more authentic, the better! I love making ethnic recipes; I'll make anything but seafood. I usually end up substituting chicken for whatever meat is called for because we LOVE it.
My favorite family cooking traditions
My mom wasn't and isn't that into cooking, so I didn't get into it until about a year and a half ago, on my own.
My cooking triumphs
Brooklyn Girl's Penne Arrabiata turned out great!!! I'm proud of that one, even though it took a while to make.
My cooking tragedies
Sometimes my love of spice (as in hot, hot) comes back to kick me in the butt. :)

Refried Beans Without the Refry
This is the best refried beans recipes I have ever come across. My husband grew up having mediocre beans, and I told him, no, you need to try this. He did, came back for seconds and now BEGS me to make this every other week. He's the one who lets me know when we're getting low on the beans in the freezer. LOVE IT!!!

Veal Scaloppini with Lemon Cream Sauce
I'm rating this based on the lemon cream sauce itself, since I used it with some Chicken Florentine. It wasn't was just way too lemony, and I like lemon! I would cut the lemon juice at least in half. That said, once I got used to the flavor, it was decent, and I finished my plate. Still, it needs some adjustment, in my opinion.

Roasted Red Pepper Soup
This was surprisingly good for how simple it is. It's a little on the spicy side, but I personally like it that way. I would make this again.
