Biscotti Toscani

made a few changes but still turned out pretty well. -used half whole wheat. -switched almonds for cranberries. -switched orange zest for orange peel. -didnt have almond extract the flavor came out good, but they weren't as crisp as i would have liked. i think i should have used all a.p. flour and baked for longer than 25 min. be sure to cut the slices thinner if you want more crisp. i think cinnamon would be a nice addition. also, i melted choclate chips into a ziploc bag with a cut corner to nicely squeeze/drizzle chocolate over my biscotti. looked very nice.

Wicked Garlic Tofu Saute

very easy and tasty. but definitely NOT garlic-y. the recipe called for 6 cloves. i used 10 and still couldnt taste the garlic. i used all fresh vegetables (broccoli, carrots, onions, mushrooms) and water instead of chicken broth. And it wasn't watery like others said. oyster sauce is essential. will make again for a quick meal.

Coffee Chocolate Chip Cookies

very tasty. flavor is good. i added espresso to make sure the coffee flavor came through i wish the cookie had a better texture though. still yummy.

Beth's Peach-Nectarine Muffins

I cooked mini muffins on the top rack for a little longer than 15 minutes. They turned out tasty and moist. But they didnt have much of a nectarine flavor even though I used 2 and 1/2 large and very ripe nectarines (no peaches). I also left out the milk because the batter was already very moist, and I added 1/2 tsp cinnamon and tbsp vanilla (didnt have any nutmeg). I also altered the recipe to make it a little healthier. I used less oil, 3/4 cup all purpose flour and 3/4 cup whole wheat flour, and 1/2 cup brown sugar and 1/4 cup white sugar.

Gumbo Style Chicken Creole

definitely a keeper. but, you MUST use 1 can of chicken stock. otherwise, it will be too thick. also, i prefer to use fresh vegetables. i used fresh shitake mushrooms and tossed in a couple of half tomatos. I served over brown rice. and to make sure that it doesnt stick to the pot, spray the pot with pam before heating the oil and flour. good luck

Homemade Black Bean Veggie Burgers

they were tasty. i didn't use all the chili powder nor sauce, and they tasted fine. i think it depends on what type of chili sauce you use. i used 2 eggs which did give the moisture. however, they didn't hold together at all. my burgers turned out more like mush. maybe its because i used brown rice instead of bread crumbs. i think bread crumbs would help absorb some liquid and hold the burgers better. also, i think this recipe would make a very tasty dip if uncooked.

Chocolate Chocolate Chip Cookies I

very tasty. but i made a few healthy changes. i used 1/2 the amount of butter, 2/3 of the sugar, less salt, and about 1/2 of the chocolate chips. and i also used mostly whole wheat flour rather than all-purpose. and the cookies came out GREAT. next time, i want to use walnuts.
