Ceviche

First time I ever had ceviche was this past summer on Block Island, RI. I haven'stopped thinking about that martini glass filled with baby scallops and shrimps ever since! I decided what better time to make me some of this than New Years Eve! It cam out perfect! It didn't take all night, overnight to cook the seafood in the lime juice. 1 hour !/2 tops. I used large shrimp cut into pieces and baby scallops. I omitted the green onion and used white. No celery, bell pepper, parsley or olive oil. I used 1/2 Jalapeno pepper instead and a dash or 2 or Cayenne pepper and a few pinches of Kosher salt served with a few Tortilla Chips on the side....This def a nice summertime dish and I will be making this one again!

Easier Chicken Marsala

Quinoa and Black Beans

WOW!!! This is DELISH! I added Red Bell pepper and used Red Onion. I also used Curry powder instead of Cayenne Pepper. And as a lot of people on here said, watch the salt! I used about a teaspoon of Sea Salt and it was a tad bit too salty for my liking. Overall this is a fabulous recipe for Quinoa!

Mojito

This is good, but is WAY better using Simple Syrup instead of Confectioner's sugar. 2 cups of granular sugar to 1 cup of water, bring to a boil for 2-3 minutes and then remove from heat and let cool. I double the batch! Keep's in the fridge forever...never spoils. Replace the Confectioners with this syrup...about 2 tbls. or to taste.

Easy Pineapple Cake

VERY easy recipe to follow and make. This would be a good one for the kids to make with mom or dad. Two things I would suggest. Depending on your oven start watching the cake at about 30 minutes of baking. Mine was pretty golden on the top but when I inserted a tooth pic it was raw in the middle. I popped it back in for another 10 minutes and it was VERY golden but cooked in the middle. So don't be afraid to keep it in a little longer. The other thing is if you plan to frost it the recipe for the frosting does not make that much. So if you like a nice layer of frosting I'd say double it. I used cream cheese, confectioners sugar and coconut flakes and it came out fabulous. You could also try cream cheese, marshmellow fluff and some crushed pinapple as a frosting too. Both are great! Oh and I also used 1 and 1/2 cups of white sugar rather than the 2 cups the recipe called for. Overall....This ones a keeper for sure!

Dutch Babies II

Hmmm...Not sure what to make of this. It wasn't what I expected it to be like which was more of a fluffy pastry like sort of dish, but its not bad! Dense and custurdy like center....light and and bread like outter edges. Kind of bland so you really need to add the sugar. Next time I make this I will for sure dice up a few apples and saute them with cinnamin and sugar and put them in the bottom of the dish before poring in mixture to bake. I think that will make a nice addition to this.

Dessert Crepes

Great recipe! Easy and made perfect crepes! I added 1/2 tsp. of Vanilla Extract to the batter. I mixed Fat- Free cream cheese and Fat-Free whipped topping together and filled the crepes, added bananas and strawberries. Kids loved them!

Crepes

Great recipe! I used whole wheat flour instead of all-purpose flour and I used Smart Balance (regular) instead of the oil for the first batch. They came out good, but my second batch I omitted the butter all together and those came out even better. Paper thin! Definatley will be making these again!

Chocolate Pecan Pie II

Manicotti Shells

If you want a quick and easy Manicotti shell...this is the recipe to use! I wanted to make homemade Manicotti shells since I always used dry tubes that would split right open when I filled them. These came out perfect. I used less batter in the pan though. I like a paper thin Manicotti shell. I also used Non-Stick cooking spray instead of butter and no need to cook both sides, they are perfectly fine cooked on 1 side!
