Caldo de Res (Mexican Beef Soup)

This soup is fantastic as is and is well-deserved of 5 stars. I kicked it up a notch by adding half a teaspoon each of chipotle powder and cumin. I had also made a roast the day before which I diced and used as the meat. This will likely become a staple soup. Thanks!

Dill Pickle Meatloaf

This recipe came to me as an email recipe of the day a while back. I love meatloaf and I LOVE dill pickles, but it sounded odd even to me. I had to try it. I have honestly made it about 5 or 6 times in the past 6 months and I absolutely LOVE it. I am a bit obsessive with watching my weight, so I use ground chicken instead of beef and I sub the egg for just egg white. I also prefer using a light sweet bbq sauce instead of the ketchup mixture and breadcrumbs instead of a slice of bread, but that's just my taste. Honestly, this is one of the best recipes I've tried from this site. Thanks so much for the contribution!!

Oven Baked Jambalaya

I was visiting my cousin and he was going to be late so I decided to make this for him - risky since I've never made it before! He didn't have a large enough oven-safe dish so I ended up having to make this stove top - it turned out AMAZING. I didn't have Creole seasoning, but concocted my own version using chile powder/cayenne/chipotle and some BBQ sauce. I only used one can of tomatoes with the juice (I like mine a bit less saucy)and added a red pepper. I cannot rave about this enough - it's probably one of the best things I've ever made. It was a huge hit and will be a regular part of my menu. (Though, he's going to have leftovers for the next six weeks!) Thanks so much!

Alfredo Sauce

Wonderful! I didn't have romano on hand but I had some monteray jack. I shredded about 1/4 cup of it and it all turned out great. I took the advice of a fellow reviewer and mixed the egg yolk with the cream before adding it. Great recipe.

Caribbean-Spiced Roast Chicken

Excellent! I stuffed one end with a pierced lemon and the other with a pierced lime. I also added paprika and turmeric to the rub and arranged sliced onions and chopped garlic around the chicken. It was incredibly moist and flavourful. I will make this again for sure. Thanks for the recipe!

Spanakopita II

I go to 'Taste of the Danforth' every year, an annual Greek festival and buy a frozen Spanakopita from this nice little Greek lady at her bakery. I really didn't think I'd be able to find one as good as hers. I'm both happy and sad to say that I won't be buying one next year - this was absolutely fabulous!! Thank-you so much for this recipe!

Spicy Beef Curry Stew for the Slow Cooker

This was great! I added one peeled & chopped carrot; 1 Tbs brown sugar and 1/2 tsp cinnamon. The only negative things I could say would be that it was neither thick nor spicy enough for my liking, but that's all about personal preference. Thanks for the great recipe!

Chicken and Mushroom Chowder

This soup was fabulous! I made it using leftovers from the night before: 'Honey Curried Roasted Chicken & Vegetables' (also from allrecipes) and the flavour from the chicken and veggies just made this even better. I'm going to do this with my leftover chicken every time now. Thanks so much for sharing!

Honey Curried Roasted Chicken and Vegetables

This is by far the best whole chicken recipe I've ever tasted. I had to make a couple of adjustments based on what I had on hand. I subbed a small can of apple sauce for the fresh ones and curry paste instead of powder, which I rubbed all over the chicken before pouring the sauce over top. I made this in the crock pot and it turned out excellent. Thank-you for the wonderful recipe!

Slow Cooker Sweet and Sour Kielbasa

Great recipe. I took it to a potluck at work last week and it went over very well. I took some other people's advice and added some sauerkraut and pineapple. If I made this at home, I'd definitely serve it over plain rice - it's very rich and tangy.

Tacos De Matamoros

This was amazing! I only made 1 lb so I halved all of the ingredients. I added the juice of half a lime to give it that extra mexican zip. Also, I used extra lean ground beef and didn't drain it. At about 45min in, I cranked the heat up to medium and let the liquid reduce on its own. (I like the beef a little saucy :) Thank-you for this recipe - I will never make tacos any other way again!

Potato Leek Soup I

I took some other people's suggestions and added a cup of milk, plus a full cup of wine with the leeks and an extra cup of chicken broth with the potatoes. I also mashed them to leave some chunks. I added 3 cloves of roasted garlic. It was quite good, though I found it a little on the bland side and had to add quite a bit of salt when serving. (And I'm not one to add much salt to anything). Thanks for the recipe!

Roast Sticky Chicken-Rotisserie Style

I made this yesterday, but used the slow-cooker (I added a tiny bit of liquid chicken broth to the bottom). I also combined all of the spices into about 3 Tbs of butter and rubbed the mixture onto the outside and under the skin of the chicken. It turned out very good – the chicken just fell off the bone! Thanks for the new recipe!
