About this Cook
I am an older woman who has been cooking since collage. I am very glad to have finally found a resource to connect with other home cooks. Being the "cooking lady" for my family, I enjoy easy recipes that even my picky eaters will enjoy, but when it's just me, I like to go gourmet!
My favorite things to cook
I enjoy any type of dessert and also bake organic breads and cookies to maintain my family's healthy lifestyle. In my older days, I'm watching my carb intake but still love to splurge a little and make some gourmet creations!
My favorite family cooking traditions
My mother used to enjoy baking a holiday fruitcake and I grew up eating the fruity dessert every Christmas. Now, with a family of my own, I'm the only fruitcake lover in the house. Still, every Christmas, I make sure to bake a fruitcake, simply to carry on the tradition! Maybe later, everyone will learn to enjoy my fruitcakes and stop complaining!
My cooking triumphs
In my younger days, my friend from collage urged me to decorate her wedding cake. I was really unsure about the whole thing and thought it would be a total disaster. I took on the responsibility anyway and after staying up past midnight to finish it, I was satisfied with my work! My friend was really pleased and everyone at the wedding commented on how good a job the decorater had done. I was really pleased, that was the first cake I had decorated that actully was impressive!
My cooking tragedies
One Thanksgiving, my mother claimed she would bring a Turkey for the celebration. When she got to my house, there wasn't a turkey in sight. She said that the local market was sold out of our main corse! I was really angry she had waited until the last minute and ended up going to get one myself. Finally I found a bird, but in my haste, I accidentally bought a chicken. It wasn't even near enough for the whole family. We had to break into the sliced deli turkey. Maybe everyone would have been better without the turkey all along!

Pineapple Muffins
How many times must I say this, these are AWESOME!! The other reviwers must have done something wrong!! I do think the title is a bit misleading, considering these are more like pineapple-bran muffins. If you are expecting pineapple muffins, you might be slightly disapointed. Also, for those of you who claimed that the muffins were tasteless, I would recommend 1 cup 2% milk instead of the non-fat, skim option. That will make your muffin richer. Also, for the 3 tablespoons applesauce, use three tablespoons unsalted butter. Personally, I think the muffins are also fine as written. I might also consider elimanating the 1/2 cup crushed pineapple, drained, and simply making raisin-bran muffins and adding a few more rasins then what was provided in the cereal. Also, for a muffin with more flavors, try addind a little sweetend coconut! If you are thinking about making this recipe, take into consideration what I said, but don't let the other reviews discourage you from making these muffins! You will not be disapointed!

Mom's Excellent Chocolate Chip Cookies
I'm known in my family for being "adventerous" when it comes to food, and luckily this time I was. This proved to be a great recipe despite all the reviews and my children got hooked on it! I glazed the cookies with vanilla glaze (normally meant for bundt cakes) and did use 2 cups of flour as other reviwers suggested. The amount of shortening and butter was fine, considering I used a light subsitute, but I don't really think that made a difference, because the batch I made for the kids used classic butter and they loved it! Also instead of chopped walnuts, I used ground walnuts, no one in my family being big on nuts! If these cookies didn't work the first time, I would consider trying them again with the recommended changes, and I can assure you, your whle family will be begging for more! Thanks, Stacy Mae

Barbara Bush's Chocolate Chips
Yum!! I actully changed the recipe a bit by making chocolate cookies. I was looking for a basic chocolate cookie recipe and found this one, deciding to try it even though it made chocolate chip cookies. Instead of using SOFTENED butter, I completely MELTED the butter in the microwave. When you mix the chocolate chips with MELTED butter, they melt, making the dough brown and chocolaty. When you bake the cookies, they will be chocolate instead of chocolate chip. That is my trick for making chocolate cookies! Thanks for the recipe, Barb!
