Italian Meatball Sandwich Casserole
Oh my goodness, this was delicious!!! I think the only modification I made was to cut my french bread in half (top to bottom) and top it with the meatball mixture rather than cut the bread into cubes (that just seemed to be a lot of unnecessary work). This was so creamy and indulgent and I absolutely loved it! I think I would like to try making it with Italian sausage rather than ground beef, but either way, great recipe that we will definitely be making again!

Jerk Grilled Chicken Wings
I have made this recipe a few times now and my husband and I love it. I do not generally have allspice or nutmeg (I don't care for it) so those two ingredients were omitted. Also, I didn't want it to be too spicy so I left out the habanero pepper. Having said that, I don't think the alterations greatly affect the integrity of the recipe (I don't like it when people rate recipes based on a bunch of changes that they have made - ratings should be based on the recipe as written, or as close to it as possible). At some point I will likely buy allspice and nutmeg so I can see what difference they make to the recipe. Right now though, we love this recipe without those ingredients - and when we can prepare food for those who can handle some spice, we will definitely make it with the peppers. Very tasty recipe for chicken!

Carrot Cake III
My family loves this carrot cake recipe. I generally follow the recipe, as written. The only changes I have made (and I've made it many times) are to add raisins when I don't quite have 3 cups of carrots and to double the icing so I can decorate the cake a bit with it. (oh and sometimes I will do half brown sugar and half white) This recipe always turns out moist and delicious. You can certainly tweak it for personal taste, but the recipe is great as written and is my go-to carrot cake recipe.
