Pineapple Zucchini Muffins

These muffins were very moist, but not very flavorful. If I try them again, I will use fresh pineapple instead of canned.

Great fruit salad! The sauce was enough to dress up the salad without adding a ton of extra calories. I took this to a party and everyone thought it was very good. I will definitely be making this agian.

This was delicious! I ended up doubling the marinade to cover the meat and vegetables,it didn't make very much. Other than that, it was great as is though! Thanks!

Slow Cooker Beef Stew I

The flavor of this was good and it was easy to make. I added a lot of extra vegetables. If you make the recipe as is, I do not think it would have nearly enough

Flan de Coco (Coconut Flan)

These were reminiscent of the Coconut Flan we had in Costa Rica last year. It turned out very well and was surprisingly easy. I used the coconut milk instead of the evaporated milk as other reviewers suggested. It turned out very smooth and the flavor of coconut was just right!

Individual Beef Wellingtons

Delicioius! I seared the steaks on all sides before wrapping them in pastry. They were very good; we will definitely have these again. It made for an excellent Valentine's Day Dinner!

Quinoa and Black Beans

This was the first time I have tried quinoa. I tasted it before adding the beans and corn, and actually thought it may have tasted better than after adding them. I only added 1 can of beans, and still thought there were too many. Overall, I still really like this dish, but I will definitely add less beans next time (or maybe leave them out altogether).

Pineapple and Apricot Skillet Chicken

We thought this was good, but it could use a little something else. It could use something crunchy to add a little texture. It was good enough to inspire us to try it again, with a few changes. It reminded us of the food we had in Costa Rica!

My husband and I enjoyed this. The flavors are a little subtle, it doesn't have that wow factor in my opinon, but it is quick and easy. We will be making it again.

Baked Oatmeal II

I changed this a little. I added less sugar, and added grated apple since I only had a few raisins left. It turned out great, a very hearty breakfast that keeps you going for hours!

Chicken Soup Au Pistou

This soup was very good, even my fiance liked it. I added the pesto to the soup pot just before taking it off of the heat. It was good before the addition of the pesto, but it adds just a little something extra.

Slow Cooker Chicken Taco Soup

This was delicious! I used chicken broth insead of beer, and I used 1 can of Rotel and 1 of plain diced tomatos, and it was plenty spicy for me! I've been eating it all week for lunch, and occasionally dinner. I froze some too, and it thawed out just fine.I will definitely make this again! I think next time I will put in less chicken and more beans, but that's just my preference.

Sweet, Sticky and Spicy Chicken

This was very good, my fiance and I both enjoyed it. I coated the chicken in flour, as other reviewers suggested, and I used less hot sauce. The flavor was very nice, it just needs a little more to it, rather than just chicken. Next time I will add some veggies to make it more of a complete meal.

Chicken Piccata II

This was very good! I even ran out of lemon juice to put in the sauce, and it was still delicious. The chicken turns out perfectly. My only complaint was that it did not seem to make very much sauce, which is not what I expected. My fiance whipped up a cream sauce out of what sauce there was though, which turned out quite nice. We will definitely be having this again!
