Queso Dip

Since I have found it difficult to come up with a decent queso recipe, this one is pretty darn good. I made it with reduced fat sour cream and I do NOT recommend that! It made it taste a little powdery. The recipe fills up a regular sized salsa bowl so its perfect, doesn't make too much.

Green Chile and Rice Casserole

YUM! My whole family loved this. Even my daughter, who swears she hates all "casseroles". So yummy. I used reduced fat sour cream to cut the fat a little. Also, I think I'll try mixing the sour cream mixture with the rice next time.

Baja Stuffed Potatoes

My family really liked these. I only used 1 can of chile peppers, 1 can of corn, and I used 1/2 pepperjack and 1/2 cheddar. I cut the potatoes in 1/2, so this made 12 servings for us. I froze half. YUM!

Ginger Veggie Stir-Fry

This recipe was just WONDERFUL!!! I make stir-fry dishes a lot, and typically I just buy a jar of "stir fry sauce". Lately the saltiness of those sauces has been bothering me, so I searched to find a great veggie stir fry on allrecipes. I am so thrilled to have found this one! My 10 year old daughters loved it, my husband had seconds and told me to "put it on the regular rotation" meaning make it often! The only changes that I made were 1) used ginger paste instead of fresh ginger (so convenient!) 2) I used fresh broccoli, fresh green beans, and I used the bagged shredded carrots. I just used a little extra green beans instead of adding the snow peas. I can't wait to make this again!!! Thank you!

Cheese Enchiladas

I took the advice of others, and modified this, which is why its 5 stars. I absolutely love this recipe! I used 1/2 packet taco seasoning rather than creole. I also omitted the mushrooms & olives, and replaced with 4oz diced green chiles (drained). I sauteed the onions, and mixed the cheese, onions, and chiles in a bowl before filling. Also, definitely put a thin layer of the sauce in the bottom of the dish, and pour the rest over the top. YUM!!!

Mexican Bean Salad

Wonderful! I omitted the cilantro becasue I find it to be a little overpowering. Otherwise this was a fantastic recipe. Its also very good with tortilla chips, it tastes like a sweet salsa! yum.

Insanely Easy Vegetarian Chili

Incredibly Cheesy Turkey Meatloaf

So great! My husband and I LOVED it, and I don't usually like meatloaf. I added an onion, diced. I also used a bit more cheese than it called for, cubed. And instead of ketchup alone, I mixed it with BBQ sauce, worstershire, and a little dijon mustard. YUM!
