Delicious Ham and Potato Soup

I fixed this as written except I lessened the amount of pepper to 1/2 t. Any more than that would have been too much for my taste, but I didn't think it was worth taking the rating down a star. I made this for a friend who had his tonsils out, so I ran his portion through the blender, and it was good that way, too.

Mango Blueberry Muffins With Coconut Streusel

These were delicious! I was making these at night after the baby was asleep & couldn't go out for coconut (which I thought I had). Other than that I followed the recipe exactly. Can't wait to use coconut next time.

Mom's Zucchini Bread

So, I just felt the need to add my 5 stars & $0.02. I normally only review a recipe if I've followed it exactly. This is not the case this time. I had been asked to make a bread for a welcome basket at church to be given on Sunday, and I forgot until late Saturday night when it was too late to run to the store. I ran out of AP flour & had to use about 1/2 whole wheat pastry flour. I also ran out of sugar & ended up using over 1/2 light brown sugar. I was totally out of regular vegetable oil & used part canola/part peanut. Finally, I only had 2 eggs (instead of 3), but I decided to go for it since they were extra large eggs. The bread still turned out fabulous. I ended up just baking one loaf & using the extra batter for extra large muffins. The muffins cooked in 40 minutes, and the bread took a touch over an hour. Moral of the story: even if you have to make (a lot of) substitutions, this recipe will not disappoint. Now I'm off to the store to restock my kitchen. =)

Strawberry Cream Cheese Spread

This spread had good strawberry flavor. I tasted it after adding just one tablespoon of confectioner's sugar and decided it was sweet enough for me. I think it would have been too sweet for my tastes if I had added the amount of sugar indicated in the recipe. My advice would be to taste as you go and keep adding the sugar until you achieve the desired sweetness.

Hasty Chocolate Pudding

I rated this recipe based on following the ingredients and instructions exactly; it tastes good and is very easy to prepare. That being said, I've fiddled with it a bit and now make it with a two changes. I use 1/3 C. of sugar, and it's still plenty sweet; that saves getting out two dry measuring cups. The other change is the addition of a big spoonful of peanut butter. I stir it in while the pudding is still hot, and then I usually start eating right away. This pudding is great warm or chilled.
