Artichoke Spinach Lasagna
my 3 month old son Eli and I
About this Cook
I LOVE to cook. Nothing makes me happier than being in the kitchen making something that I know will make someone smile. I have a four month old son who I can't wait to cook for! His father is such a good sport when trying new recipes. I always appreciate his opinion!
My favorite things to cook
I'm a vegetarian so anything without meat! I love cooking healthier things but I also love cooking typical comfort foods. I won't cook anything that doesn't leave me speechless again.

Restaurant-Quality Baked Potato Soup
Everyone in my family devoured every last bit of this soup. My father actually used bread to wipe the bowl clean! I made it vegetarian by using vegetable broth and vegetarian bacon strips. I will definitely be making this again! Thanks for the knockout recipe.

Artichoke Spinach Lasagna
this was a great alternative to traditional lasagna. my family loved it! i added ricotta and used no boil noodles. i also added about 2 tablespoons flour to the onion/spinach/artichoke/broth/sauce mixture (before i added it to the pan) because it just looked so watery. next time i will make it with a cream sauce instead of a tomato.
