Chinese Tea Leaf Eggs

The patterns that emerge on these eggs are beautiful and unique they have a very interesting taste, too. I'm glad I remembered this recipe in time for Easter. I think my young daughter will enjoy cracking the shells and then eating the eggs later!

Moroccan Chicken

Even thinking about this recipe makes me incredibly hungry! It's delicious, so fragrant and rich and the oregano adds an interesting element to what would be a fairly standard curry mixture otherwise. I've also used lentils and chopped broccoli in this recipe and it's turned out well.

Spicy Cabbage Kimchi

I've made this 5 times now and it's excellent! I lived in South Korea for 2.5 years and my friends who also lived there think it's amazing, too. The first time I made it I followed the recipe exactly and found it a little salty. The next few times, I cut the salt by half and tweaked it a little to my liking; adding another 1 tbsp sugar, a grated carrot, about 1/2 tsp ground black pepper and fresh ground ginger root instead of dried ginger. I have to say now that it's probably the best kimchi I've ever eaten and it makes amazing kimchi jjigae and kimchi bokeumbap!

Popcorn Balls

So good! The only thing I changed was to add a dash of cinnamon. I've tried the recipe with added almonds as well and I imagine peanuts would be good too. I gave these out for Christmas and everyone loved them.

Chocolate Wave Zucchini Bread

AMAZING! So moist and delicious. I've made this a couple of times, most recently for my students at school and they all loved it. The only thing I changed was to leave out the walnuts as we have a nut-free policy at our school due to allergies. Definitely a favourite!

Lemon-Thyme Cornish Hens

Excellent! I've also tried changing the recipe a little by omitting the coconut and using 1 cup of chopped almonds rather than walnuts and it was delicious, too.

Braised Balsamic Chicken

I found this recipe a little acidic and heavy on the balsamic vinegar but I found if I tweaked it a bit I liked it a lot better: reduce to 1/3 cup of balsamic vinegar, reduce to 1/2 tsp rosemary, use 2 cloves of crushed garlic rather than garlic powder and add 2 tbsp of tomato paste to the recipe. Tasty.

Rosemary Lemon Muffins
