I'm a 46 year-old mom with 3 children at home ranging in age from 10 to 21. My 21 year old is getting better with cooking and my 13 year old is getting into the mix also. I've been cooking since I was 9 and by the time I was 17, I was cooking the majority of the meals in my household. In addition to raising my family, I also run my own business and help my husband run his. There's always something going on! We entertain often so I'm constantly getting opportunities to test my skills!

Lately I've been experimenting with Vegetarian recipes. That's like learning to cook from scratch. it's a challenge.

My husband is hispanic so having my father-in-law tell me that a Mexican meal I made was as good as home was a really big deal for me.

Jamie's Cranberry Spinach Salad
This is beyond good! The dressing makes the salad! I was addicted to it for awhile and then I had to give it a break. LOVE this!

Slow Cooker Barbeque Chicken
I really loved how simple this was. I didn't have high expectations for the taste but it was really good. I didn't even have to preseason the chicken. Straight out the package and into the slow cooker. Tonight I'm trying it on ribs. The only thing I changed is I didn't add much sugar. Maybe a tablespoon if that. The sauce is already sweet enough to me. Update: I tried it with pork ribs tonight and it was just a a good as with the chicken. This is a keeper!

Oh-So-Good Chicken
This was a really good recipe. I got lazy and took some short cuts. I didn't cut the chicken into small pieces. I just layered the pieces on the bottom of the baking dish and poured the other mixture on top of it. I used medium salsa which gave it a little kick. That might help for those reviewers who said it needed a little more flavor. It also helps to season the chicken well when you're cooking it. In addition to the cheese in the recipe, I put a thing layer of cheese on the top of the casserole just before i put it into the oven. That makes it come out nice and pretty.
