Baked Apple Oatmeal

This was such a yummy recipe! Thank you! I have since changed this up a little. I substitute 2 cups of water for 2 cups of milk, cut the brown sugar back to 1/4 cup, increase cinnamon to 1 T., omitted the raisins and walnuts and added 4 T. flaxseed. The calorie count for my adjustments are 231.2. I've also substituted canned pears instead of apples when I'm in a hurry.

This was really good and I used it as a base for what I had in the house. I used apple chicken sausage, threw in some leftover cabbage, a sweet potato and 2 apples. I juiced half a real lemon, added the brown sugar but omitted the salt. I also added cinnamon and nutmeg per another reviewers idea.

Orcchiette Pasta with Broccoli Rabe and Sausage

Excellent! Everyone in my family had seconds. I used mild italian sausage cooked on the grill and cut into coins and cauliflower as well as leftover peas. I also was generous with the black pepper. This will definately be put into our rotation.

Slow Cooker London Broil

What an excellent recipe! The meat was so tender, it just fell apart. I only used half a packet of onion soup mix and that was still a little too salty for us. Next time I will add some potatoes to the crock to help absorb the salt content. We loved the gravy so much that I'm thinking about using it as a base for beef stew. Thank you!

Almost No Fat Banana Bread

We love this bread! I've made it several times now through the course of the year and no one can tell it's a low fat recipe. I haven't deviated from the original recipe and it has always come out moist. It's the only banana bread recipe I use now!

Apple Bars

Very good! I didn't have any walnuts so we substituted pecans. I had a lone envelope of low sugar apple, cinnamon oatmeal that I poured on top and patted with butter before I put it in the oven. We really enjoyed this, thank you!

Kalamata Pork Tenderloin with Rosemary

This was excellent. My pork was too small to cut into medallions so I just cut them into pieces. We couldn't taste the olives, which was okay. The sauce was amazing though. Such a deep, rich flavor! It was hard to stop eating it. :) Thank you for such a lovely recipe.

Ethiopian Cabbage Dish

I've never eaten Ethiopian food but had most all of the ingredients to make this. I didn't have any white potatoes so I used the (one) sweet potato I had and I didn't have turmeric so per another reviewers advice, I used balsamic vinegar. What a wonderful flavor! This will definitely be added to my rotation. Thank you so much!

Cranberry Dip

OMG - this was excellent! I cut the sugar by 1/4 and feel I could cut it by 1/2 cup without compromising the taste. I also used orange marmalade because that's what I had. Thank you - I will be using this recipe for years to come.
