Butter Bean Burgers

I loved the premise of the recipe but since I was making it with my young children in mind, I omitted the jalepeno, onion and cheese and added 1 T. parmesean cheese, about 1/2 cup chopped walnuts or almonds (sauted in margarine). My children really like this alternative burger.

Almost No Fat Banana Bread

We love this bread! I've made it several times now through the course of the year and no one can tell it's a low fat recipe. I haven't deviated from the original recipe and it has always come out moist. It's the only banana bread recipe I use now!

Cold Spaghetti Salad

Although this is good, it's incredibly salty. Next time I'll substitute black olives and omit the dry dressing packet. I also omit onions, tomatoes and mushrooms (no one but me likes them) but add zucchini.

Baked Apple Oatmeal

This was such a yummy recipe! Thank you! I have since changed this up a little. I substitute 2 cups of water for 2 cups of milk, cut the brown sugar back to 1/4 cup, increase cinnamon to 1 T., omitted the raisins and walnuts and added 4 T. flaxseed. The calorie count for my adjustments are 231.2. I've also substituted canned pears instead of apples when I'm in a hurry.
