Fast Beef and Rice

This was OK. I had some leftover hot italian beef with the gravy (italian dressing powder and water) that I cut into small pieces. I added 1 1/2c. hot and spicy V8 and 1 cup of beef broth as well as garlic and pepper. It was still very bland so I followed another posters suggestion and brought both soy sauce and worcestrshire sauce to he table and it was much better after addng the worcestrshire sauce.

Skier's Skillet

This was really good and I used it as a base for what I had in the house. I used apple chicken sausage, threw in some leftover cabbage, a sweet potato and 2 apples. I juiced half a real lemon, added the brown sugar but omitted the salt. I also added cinnamon and nutmeg per another reviewers idea.

Creamy Chicken on Linguine

This is a really good pasta dish. I used 3/4 of an onion because I was afraid it was going to be too overpowering. I substituted lactose free skim milk for the heavy cream and used 1/2 cup chicken stock instead of a bouillon cube. I put the sauce in the blender to puree it as well. I only used 3 chicken breasts and found even that to be waaaay to much chicken. Because I used milk instead of cream, the sauce needs to be thickened with cornstarch so it will stick to the pasta. Oh, I also omitted the green onions and added extra minced garlic and chicken stock while cooking the chicken. . The calorie count on my was 172 calories per cup. That doesn't include the extra chicken broth I had to add. Figure in the calories of an extra cup of broth and you should have an accurate count.

This was very good. I used Motts tots low sugar apple juice. It was a little sweet for my taste, even though I cut 1 T. out of the original recipe.

Easy Baked Tilapia

This was just ok. The flavor wasn't balanced enough for my taste. It needs some lemon squeezed on top of the fish I think. Also, thaw vegetables beforehand. Mine were still cold.

Peach Tea

I was disappointed in this recipe since it got so many high reviews. I followed the recipe exactly and everyone thought it tasted like watered down tea. I'm going to add 4 or 5 more peaches and see how it tastes and a little more stevia as well.

Strawberry Freezer Jam

This is very good and easy, however, I cut the sugar down to 2 cups and it is still way too sweet. I will try one cup of sugar next time and maybe cutting the sweetness with rhubarb.

This was OK, a little bland. I added leftover shake and bake chicken which helped thicken up the sauce. Next time, I will try squeezing a lemon on it in hopes of gaining more flavor.

Hot Cocoa Mix

I followed a few suggestions and I think this is now an excellent recipe. I sifted the milk powder to ensure there would be no clumps. I increased the powdered sugar to 7 cups and used vanilla non-dairy creamer. We crushed peppermints and layered the chocolate mix, peppermints and marshmallows and gave these out as gifts to my dd cross country friends. If you are going to layer this, put a piece of parchment in between the layers if you want it to look asthestically pleasing. i wish I had thought of this prior to assembling all those jars.
