Creamy Spiced Coleslaw

Absolutely perfect! This is my ideal creamy coleslaw. I followed the recommendations of 3/4 cup mayo and 1/4 cup sour cream. No celery seed in my cupboards, so I added a generous dash of celery salt. Since I shredded my own cabbage and veggies, I gradually mixed in scoops of the sauce. I have about 1/4 cup left over. It only has too much sauce if you add too much! Will save the excess for a veggie dip! Will make again!

Holland Cream (White Cream Filling)

This is the second time I've made this filling, and it is great! The first time I followed it exactly...but I added some cinnamon, nutmeg and clove to make it spiced for some fall chocolate cupcakes. This time, I went to pull out my shortening, only to find that I was all out (oops!) So, I substituted softened butter, and it turned out great. Whew! I did a 1/2 recipe both times, and it easily filled 50 cupcakes...with a little extra left over.

Cocoa Banana Bran Muffins

Very tasty, moist muffin! Only changes I made was to use coconut oil (melted first), 1/2 white and 1/2 whole wheat flour, and added an extra 1/2 cup bran flakes (sorry, Kelloggs...didn't have All Bran!) I might add more bran flakes next time - maybe a whole extra cup. All-in-all...I will be making these again!

Lime-Tarragon Grilled Chicken

This is my go-to grilling chicken marinade! I love tarragon with chicken! And the lime adds great zest! You can not go wrong with this one!

Old-Fashioned Shortcake

Exactly what I was looking for! This is an easy-to-make, tasty shortcake recipe! I followed the recipe exactly as it was stated, only change is that I added a 1/4 tsp. cinnamon & baked it at 350 (mainly because our oven over bakes too easily at higher temps). I will make this again!

Teriyaki Burgers

I had a Teriyaki Pineapple burger while at a restaurant a few months ago and just had to try it on my own. Followed this recipe just as it is, and it was perfect. Then I sauteed fresh pineapple rings and onions in Teriyaki marinade to make the burger amazing!

Frozen Peanut Butter Cheesecake

This cheesecake is amazing! My only suggestion is that you make sure you read over the recipe carefully (which I usually do), as I missed the fact that the two cans of sweetened condensed milk we suppose to be 5oz. cans...not the two 14 oz. cans that I had in my pantry (Yikes! Who knew sweetened condensed milk even came in 5 oz. cans!?). I just tripled the recipe and made 1 huge cheesecake in my springform pan (with a doubled crust recipe) and 1 small cheesecake in a pre-prepared crust pan. So, all turned out okay in the end! Rich, creamy, and absolutely delicious despite my error!

Zucchini-Chocolate Chip Muffins

I made these last fall when someone gave us a zucchini. The only addition we made was to add some raisins (my husband loves raisins!) Sent them into work with my husband and they were a hit! I planted my own zucchini plants this year and they are producing like crazy...I'm going to go bake a batch of these muffins right now!
